LOVE these! They have become my favorite cookies and are often requested by my step-daughters as well as my co-workers. I usually substitute walnuts for the pecans because I think they go great with coconut. Great recipe!

Intended this to be a side dish but hubby dug in early and this wound up as the main course! Chopped the zucchini instead of shredding and added a cup of frozen corn. Delicious!

Easy and delicious! This is a wonderful basic quiche recipe and it is easy to make substitutions, depending on what you have on hand. Great as is, but last night I added cubed ham, baby bella mushrooms and onion along with the zucchini. Too late, I discovered I didn't have ricotta cheese but it turned out great without it. You can use any cheese you have on hand. I like Kraft's italian blend but once made it with shredded pepper-jack and my hubby loved that! Thanks for a great recipe!
