I am the lucky wife of a wonderful man, the mother of four incredible boys.After several years of classroom teaching, I am now an administrator for a large Head Start program. I am also a semi-professional photographer. We live in fly-over country with our black lab, Shadow.
My favorite things to cook
I am looking for new favorites, because I am trying to adopt new, healthier eating habits. Hoping to find recipes that are big on flavor and nutrition while also quick and easy.
My favorite family cooking traditions
My children and I bake many, many cookies at Christmas, and they always do make-your-own-pizzas on Christmas Eve. Christmas is always ham, and my boys can request anything they want for dinner on their birthdays, which usually means pizza or wings.
My cooking triumphs
I learned to make chicken parmegiana, my husband's favorite dish, ALMOST as well as his mother!
My cooking tragedies
Any attempt at baking yeast bread has met with disaster. Those little yeast spores just don't like me.

Chili Casserole with Egg Noodles
This was not bad. It was flavorful and filling and a good budgetwise choice. Next time I will drain the beef after browining it. It was very greasy. I thought it was odd that the recipe didn't say to drain it,but I always follow the recipe the first time I make something. We topped it with sour creme which was good.

Campbell's Kitchen Chicken with Sun-Dried Tomatoes
Very good flavor, though the sauce turned out a little too thin. If I make it again, I will thicken with a little cornstarch.
