I have two children, Grace 4 and Brady 7 months, and I am so lucky that I get to stay home with them everyday. I am always finding great recipes off this site.
My favorite things to cook
I love to cook anything with chicken. We are not a huge red meat family so we cook a lot with chicken. I can always find a great creative recipe on this site.
My favorite family cooking traditions
we don't have any real cooking traditions but when we cook mexican food we go all out. Making fresh pico de galo, guacomole, spanish rice, tacos, and enchiladas

I am not a good baker but would like to get better over time.

Chicken Pot Pie IX
This was the best pot pie recipe by far out there. I followed the recipe except I omitted the peas because no one in our family likes them but it turned out wonderful. I will make this again and again. So simple to make and fairly inexpensive since most of the things you might already have on hand. Thanks so much for sharing this recipe, this will be a keeper.

Satay Sauce
This was so goooooood. I used 13 oz of coconut milk instead of the 10 oz can. I baked a couple of chicken breasts in the oven and cubed and put into the sauce. I garnished it with chopped green onions and served it over jasmine rice. I would make this again in a heart beat. I am going to use the leftovers tomorrow and put it over linguine noodles. Thanks so much for sharing.

Rainbow Pasta Salad I
I changed this recipe up just a little and added chopped cucumbers (remove the seeds), chopped roma tomatoes(remove the seeds), and one chopped green pepper. I also use deli salami and cut into strips. I never have put olives in mine because no one here likes them. I also use fresh mozzarella and cube it into little chunks and it adds a nice flavor with the dressing.
