Thai Curry Tofu

I made this and found it very salty. I used curry paste in place of curry powder and added a little brown sugar to go with it. I also served it over rice noodles. the tofu fried itself in seasoning salt was tasty as just a snack or appetizer. Next time I will use less seasoning salt and add vegetables.

Lemon Cake with Lemon Filling and Lemon Butter Frosting

I made cupcakes with this recipe for work. Everyone loved it. I filled liners one-half to three-quarters full and baked at 350 for 25-30 minutes. The tops of the cupcakes didn't really brown, so just check with a toothpick. After the cakes cooled I used the large size of a mellon baller and removed a little bit of the top of the muffin. (about 1-1 1/2 tsp in volume) I piped in the filling with a ziploc bag. Then I piped the frosting on top, also with a ziploc. I topped it all with some sugared lemon rine I isolated from the lemon with a zester. Overall I used about 6 lemons total.

Jambalaya with Fresh Fruit

I submitted this recipe and it was changed by the all recipe people. I only called for pineapple, not mango and apple. I think that with all that fruit, I would have to agree with the earlier review that it is too much.

Irish Cream Truffle Fudge

This turned out good. I would have mixed the Bailey's in better. There were times you would bite into a piece and it would taste so much like Bailey's and slightly bitter and other times it would taste sweeter. If you don't like super sweet fudge, this recipe is for you. The Bailey's lightens up the sweetness of the fudge.

Thai Chicken Curry with Pineapple

I submitted this recipe, so keep in mind the rating is biased...unfortunately the editors took out my notes from the original submission, but I think there are a couple of things that will help prepare this. 1) Curry paste is a mixture of curry powder, ghee, lemongrass and other spices. It can be found commercially at places like Amazon or high end grocery stores like Bristol-Farms in San Francisco. Any color/flavor of curry will do, as per your preference. They even have variety packs you can get. 2) One can substitute lite coconut milk and it is 60% less calories and fat and tastes the same (also available at places like Amazon). 3) Add 1 tablespoon or more curry paste, depending on your spice level desired. 1 T is about low-medium spice. If you over-spice, add more brown sugar (this only works to a limiting degree). 4) Prepare and stir in rice or cellophane noodles for added texture. Also can be served over rice or with naan. 5) Mix up the vegetables. Add cubed potatoes, beans, mushrooms or whatever. Frozen vegetables can easily be added.

Anaheim Fish Tacos

I subed bell peppers for anaheim and added a small onion. I also added 2 t of red pepper flakes, no lime juice. Everything came out great and tasted great!

Chocolate Chip Oatmeal Muffins

I add about 1/2 cup more chocolate and mix it up with white, milk, semi-sweet and bitter sweet chips. These are wonderful muffins and everyone at my work loves them. Also I made mini muffins. It makes about 48 and bakes for the same amount of time.
