Potato Salmon Patties

These were so tasty. I didn't have celery salt, so I added about 2 T. finely chopped celery. The only other change I made was omitting the seasoned bread crumbs - instead, I coated the patties in seasoned panko bread crumbs before frying them. I served them with coleslaw. They didn't need any sauce in my opinion.

Fiesta Fry Pan Dinner

I didn't have instant rice so I used basmati rice (rinsed). I had to adjust a bit, using 3/4 cup rice and 1 1/2 cups water, and cooked for 25 minutes. I put in the zucchini and corn after about 20 minutes so they wouldn't get too mushy. We all liked it. Thanks!

Minnesota Pork Chops

I agree with the others that said the rice is very good, but the pork chops are not so great. I used bone-in chops, but they still turned out very dry and pretty tasteless. I followed the recipe, except used basmati rice. I don't think I'll be making this again.

Best Chicken Ever

This is a great recipe for tasty and moist chicken breasts. I used ranch dressing instead of sour cream, and seasoned the crushed cornflakes with onion powder, garlic salt, pepper and a bit of Italian seasoning. I think sour cream would not have provided as much flavor, but if you season the chicken it would probably work.

Toffee Bars

I'm so glad I found this recipe. My mother used to make these every Christmas, but it's been 10 years since she passed away and I'd almost forgotten about them. This is a perfect combination of sweet, crumbly, chocolaty goodness -- everyone loves them. I followed the recipe exactly, but doubled it for a large group. I used a large cookie sheet (jelly roll pan), and they came out about about 1/2" thick with the chocolate bar topping. I'm going to re-start the Christmas tradition beginning this year!

Easy Chicken Salad

I would have never thought about putting mixed veggies and corn in chicken salad, but this was very good. I used frozen veggies (cooked and cooled) because that's what I had in the house. Otherwise followed the recipe as written. Very quick and easy to prepare.

Beef Spinach Hot Dish

I found this using an ingredient search for ground beef and spinach. I substituted fresh spinach and fresh mushrooms, and cheddar cheese because I had them in the fridge. The flavor was great, but needs some substance. I spooned it over brown rice, and everyone seemed to like it (no leftovers). Next time, I might add pasta to the mixture as others suggested.

This was good for a quick easy meal, and tasted a lot like an old stand-by my mom used to make. I used Italian-style stewed tomatoes which added some extra flavor, I think.

Easy Salsa Meatloaf

Super good. I was a bit skeptical -- never thought of this combination for meatloaf. I rarely stray from my regular meatloaf recipe passed down from my mother, but I had all the ingredients on hand so decided to give this a try. Very tasty! I even overcooked it by about 15 minutes because I had gone out for a walk, and had forgotten to wait until it was finished. It was still moist, with just a little crust around the outside. I'll make this again for sure. Thanks!

Famous Pork Chops

Such pork chops! I was afraid of them being too salty with the addition of garlic salt to the Ritz crackers, but I decided to trust the recipe and it was no problem. I added a few shakes of onion powder to the cracker mix too. Also follow the suggestion of some others and broiled on one side for a few minutes to get crispy. They were still very moist and delicious, even though I thought my chops were a bit on the thin side. This will probably be my standard recipe for pork chops from now on.

My Mom's Swiss Steak

I only rate the recipes I really like or really don't like, and I liked this very much. I pretty much followed it as written, except I sliced the veggies instead of dicing them. Served with mashed potatoes - very yummy. This reminded me a lot of the swiss steak my mom used to make.

Best London Broil Ever!

I don't have the planning skills to start dinner early in the day, so I count on my pressure cooker a lot!. This came out really good. I used one can of stewed tomatoes, 1 cup of water, a pkg. of onion soup mix and a clove of crushed garlic. For those of you who don't have a pressure cooker, I highly recommend getting one. Meat comes out amazingly tender - no matter what cut you use --and so fast. The key is lots of liquid. I always brown the meat first - it makes a huge difference. Unlike a slow cooker, it's best to cook your veggies separately, as they tend to get mushy.

Garlic Pork Roast

I used a pressure cooker, because I needed to cook faster. For those who complained about the meat being dry: If you used a pork loin, there is very little fat in a loin to keep the meat from drying out. I used country-style boneless pork ribs, and it turned out very moist and juicy. Yes, the sweet potatoes do tend to get mushy - they cook very fast in relation to the meat. I added them about half-way through the process and they were good. I think that next time, I would bake the sweet potatoes - or I'll try it with red potatoes instead.

Broccoli Chicken Casserole I

This was very good. Instead of boiling the chicken, I sauteed it in about 2 T. of olive oil. I reserved some of the juices and browned bits and mixed in the soup, mayo and a litte milk in the pan before mixing everything together. I think this really enriched the flavor.

Kielbasa with Peppers and Potatoes

Very good. I sauteed the veggies (plus onions) seasoned with garlic salt and pepper first, and browned the sausage separately. Then put everything together to finish cooking. Too much stuff to get nice and brown in a pan at the same time.

Best Tuna Casserole

Very good - easy, fast and tasty. I added a couple tablespoons of mayo the second time I made this - it helps with the consistency, I think. Sauteed the chopped onion with fresh mushrooms (not canned) before adding to the other ingredients.
