About this Cook
I work long hours in the aerospace industry, so I look for relatively easy recipes most of the time -- although I like to go "all out" when I have time. I love to make breads when I have free time on weekends, and since I don't have a stand mixer, I have to do it the old-fashioned way (no interest in the bread machine method). Sharing food is the best part of cooking, so I tend to make lots of extra when we have get-togethers so people can take home the leftovers.

My favorite family cooking traditions
My family just loves food, so any time food is involved, it's a good time. We're mid-westerners, so meat and potatoes is always a sure thing. I tend to go overboard at holiday time, and everyone gets loads of goodies - this I inherited from my mom, who was an awesome cook and baker.
My cooking triumphs
Lots of them -- usually centered around breads of some kind.

Potato Salmon Patties
These were so tasty. I didn't have celery salt, so I added about 2 T. finely chopped celery. The only other change I made was omitting the seasoned bread crumbs - instead, I coated the patties in seasoned panko bread crumbs before frying them. I served them with coleslaw. They didn't need any sauce in my opinion.

Fiesta Fry Pan Dinner
I didn't have instant rice so I used basmati rice (rinsed). I had to adjust a bit, using 3/4 cup rice and 1 1/2 cups water, and cooked for 25 minutes. I put in the zucchini and corn after about 20 minutes so they wouldn't get too mushy. We all liked it. Thanks!

Minnesota Pork Chops
I agree with the others that said the rice is very good, but the pork chops are not so great. I used bone-in chops, but they still turned out very dry and pretty tasteless. I followed the recipe, except used basmati rice. I don't think I'll be making this again.
