Corned Beef and Cabbage

I was looking for a way to cook the brisket for Reubens, so I didn't include any of the veggies. I followed the rest of the recipe and made sure that there was enough water added to keep the meat covered. Turned on the crock pot and went to bed! The next morning I awoke to the most tender and delicious corned beef. Perfectly done and couldn't be easier.

Christmas Chip Dip

I love this. But I really wouldn't even have thought to call it a "recipe". For me, it's just a way to eat jalepeno pepper jelly! Which is on a cracker over cream cheese. It's simply delicious. It's a nice mix of sweet and spicy. (But if you don't like spicy, you probably won't enjoy it.) I howerver, LOVE it.

Cobb Sandwich

This reminds me of a recipe I have enjoyed for a long time. Mine is a "club" and has no chicken. It's three slices of toasted whole grain white bread and also has thinly sliced red onion and tomato. It's a keeper!

Blueberry Zucchini Bread

Delicious and moist. I made it in a 9x13 cake pan with great results. Baked it for about an hour. I did top with a mixture of cinnamon, nutmeg, white & brown sugars as others suggested. I usually don't mess with a recipe I haven't tried before, luckily it was very good. I'll be baking this again, perhaps with a bit more zucchini next time as was also suggested.

Rita's Eggs Strata

I made this for Thanksgiving morning and everyone enjoyed it and told me to be sure that I save the recipe. The subtle changes in seasoning were what made this a keeper. It isn't overwhelming, but different enough. "Egg dishes can be kinda boring, but this one was good." I added 1/2 pound of bacon and 1 pkg of pork sausage (because I had them on hand.

Perfect Pumpkin Pie

I thought everyone made pumpkin pie this way! It's the only way I've ever known, and it's fool proof and perfect each and every time. What could be easier --canned pumpkin, egg, cond. milk and spices! (Especially if you an "Already Pie Crust" from the refrigerator section of the super market!) --It's home baked!

Honey Bun Cake I

Well after spending tons of time reading all of the reviews & deciding what changes to make to the recipe, I went to my cupboard to get the yellow cake mix and lo & behold if I didn't find a Betty Crocker Super Moist Cinnamin Swirl cake mix (there was a big sale and I stocked up a couple of months ago.) It is basically this very recipe --a yellow cake mix with a separate pouch containing brown sugar & cinnamin. So I just used that and followed some of the suggestions I found here in the recipe reviews. I baked it in a sprayed bundt pan, beginning with 1/3 of the sugar/cinnamin mixture (to which I added 1/2C of crushed walnuts, then half the batter, swirled in 1/3 sugar/cinnamin and repeated. Ater baking & cooling 10 minutes, I made a glaze of 1 cup powdered sugar, 1T milk and 2T strong coffee, and drizzled it on while still warm. (I didn't use all of it) Delicious!

Ham-Stuffed Manicotti

Although my family said that they thought this dish was "OK", I don't think that I'll be making it again. It just was too much effort for what it ended up being. That may also be due to the fact that my family is less than open to changes in what they are familiar with. When I said manicotti, they were looking for a ricotta filled tube with some sort of a red tomato sauce. So this may not be a fair review of the recipe, since they weren't likely to be open to it from the get go.

Sweet Potato Bisque

Sorry, just wasn't for me. I don't even think that it was the recipe necessarily. I guess I just don't care for this in general. I found it to be rather drab and just not worth it. (I like sweet potatoes, but they just don't seem to be enough to pull off a soup.)

Cheesy Vegetable Chowder

Absolutely the best! I'd give it more stars if I could! Everyone enjoyed this. I didn't use celery, corn or peas. Instead I used: broccoli, cauliflower, fresh mushrooms, fresh pea pods, potatoes, carrots, fresh green beans, and microwaved them until just tender. It was FABULOUS, but next time I'll select a few less veggies! This recipe will be a staple in at our house.

African Peanut Soup

Wow this was terrific! I used canned tomatoes with green chilis and it really added some zing! If you like it a bit hotter, this may be something you'd enjoy as well. I only had chicken stock on hand, so I used it. I doubt it changed things too much --and since this turned out so great, I'll most likely use it again.

Lazy Golumbkis

This sounded so much better than it actually ended up to be. Nobody liked it (even my husband who'll eat anything.) The flavor was bland, the rice was crunchy and it was overcooked. If I were interested in trying it again, (which I'm not) I'd use Minute Rice and wouldn't add it or the cabbage until much, much later.

Chicken Stew With Coconut Milk

This was an interesting stew. In the first few spoonfuls it wasn't looking very promising. BUT... the more you eat it the more it grows on you! Although not what I expected, I did ultimately enjoy it.
