Vegetarian Bean Curry
To avoid undercooked lentils and to shorten the required hour of simmering, the first step of this recipe should be: Boil 1.5 cups of water. Add 1/2 cup of lentils. Cover and simmer on low heat while you prepare the rest of the recipe. (that probably takes about 15-20 minutes.) Lentils will be softened. Drain lentils and add to the tomato-bean pot and simmer for however long you have available, but at least 15-20 minutes to blend flavors. I did the above plus added another can of beans (whatever you have-I had great northern beans) It came out great. The raisins were an excellent idea. I also accidently added 2 Tbsps of cumin. Still tasted great. Thanks.

Horseradish Meatballs
I made this slightly different (no beef), and it came out very good. I found this recipe by using the ingedient search for turkey and pork as I needed to use up a boneless porkchop and 10 oz of ground turkey. (I ground the pork chop in th efood processor) I used half of the amounts for the rest of the ingedients. I thought the sauce was a little too sweet so I added a little more vinegar and a little more horseradish. Next time I would cut back on the brown sugar because ketchup, chili sauce, and worcestershire sauce already have sweeteners in them (corn syrup/sugar).

Morning Glory Muffins
Delicious and more healthy recipe than regular morning glory muffins as it uses half the oil and adds applesauce instead. The other good thing about this recipe is that instead of beating the sugar with the eggs and oil, it says to mix the sugar with the flour. This was quicker and I did not find any difference. Changes I made: used 2 cups white flour and almost 1 cup whole wheat flour, a tad more applesauce and made it in 2 loaf pans. Sadly, I did not have any rasins, and only half the coconut on hand, but it was great without. Baked for 1 hour. Thank you Evelyn.
