Russian Eggplant
i ended up making a great dip out of this by accident.my eggplant was too small and fell apart after boiling!This is what i did: sautee onions and tomatoes in olive oil with some fresh basil. boil small pieces of eggplant. add eggplant,tomatoes and onion to sour cream mixture, stir everything together and put on sourdough bread. my son and i ate it all before dinner!
