I live on five acres of some of God's most beautiful country. I am a home educator with four children so far. I enjoy country living and hope to become more self sufficient. Can't wait to put my large garden in and plant my fruit trees and start reaping a harvest!

Lasagna on Christmas Eve or the night we trim the tree. Or both!:) Baking several types of cookies for Christmas. Roast Beef on Christmas Day Mashed Potatoes and Gravy at every holiday meal.

Delicious Pumpkin Bread
Excellent recipe!It baked well in three foil 3x8 pans from the grocery store. Took a little longer than 60 minutes, more like 70-75 minutes. Very good texture and melt in your mouth yummy. My kids ate the sloces with butter, but I didn't. It didn't need it.

Cranberry Almond Biscotti
I was given a very similar recipe some years ago which I loved. This is very good biscotti which is easy to make and not too bad for you. I just made this today for my Christmas baking and since I plan to make some orange cranberry drop cookies, I instead used 1 teaspoon vanilla, 1 teaspoon lemon extract and slivered almonds (I like slivered better than sliced). I left out the cranberries. They are very good -a nice, subtle flavor and the perfect cookie to go with tea. We love 'em! Merry Christmas!
