Chicken Tequila Fettuccini

Reviewed: Feb. 19, 2008
Sooo good! Even though I didn't have yellow pepper and only roasted red peppers. Still it made my DH's top 10. Next time I'll try with all the peppers--I'm sure it can only taste better. FYI, doesn't do well as leftovers or as a freezer meal--it gets really soggy and greasy.

Love this dish!! My DH put it in his top 10! I've made it many times with different variations, but staight as its written is excellent. I always make extra and freeze it. It freezes great!

Scallops with White Wine Sauce I

So delicious! FYI, be sure to rinse the scallops REALLY well first. The grit can turn off anyone to scallops, no matter how yummy the sauce is.

Yumm-O! I added a bit more garlic and spicach, just to stretch the filling. It froze beautifully and tasted wonderful!

INCREDIBLE! So yummy and sooo impressive looking(and sounding for that matter). We added mushrooms to the sauce because it just seemed right with all that wonderful bleu cheese and steak--absolutely wonderful!

Wienerschnitzel

This is wonderful! We had a Girls Night Out with The Sound of Music as our theme--so we had this for dinner--with noodles of course, perfectly paired with Austrian wines (Gruner Veltliner and Zweigelt). We watched the movie (and sang the whole way through it) and had Salzburg Mozart Chocolates for dessert! Super yummy and super fun!

White Chili

I just made this for my husband and he absolutely LOVED it! I used a mixture of Cheddar and Pepper jack and I melted them before I added the beans--so I didn't smash them up as I stirred the cheese in. I loved it and my hubby insists on me making it again!

Egg and Cheese Puffs

Reviewed: Sep. 9, 2006
These are sooo cute and sooo yummy! I made them for a baby shower and they were gone before I could get any--good thing I saved a few for me first! I also used turkey bacon and some extra onion. They did stick to my pan, but I have an old crappy pan, as another reviewer noted. Hey, it gives me a good reason to get a new one! Great to freeze and reheat for a quick breakfast on the go!

Awesome! I loved these! My husband wasn't quite as excited about them as I was, he thought they were a bit greasy. I may have used too much oil on the buns when I warmed em. Anyway, I loved them! They're great reheated too!

Plum Blueberry Upside Down Cake

Reviewed: Sep. 9, 2006
Easy to make and yummy to eat--especially topped with ice cream or cool whip! I made it with the plums and it turned out beautifully! Not too sweet and oh so moist. My hubby loves it and showed it off to his buddies at work. Makes a wife proud! Next time I'll try it with peaches and blueberries just for kicks.

Italian Sausage Soup with Tortellini

Reviewed: Mar. 30, 2006
Ridiculous how good this is! I omitted the zuccini because I'm not a big fan, but otherwise I stayed pretty true to the recipe. I used a combonation of frozen regular tortallini and fresh pesto tortillini. The forzen held up much better--especially the next day. Next time, I'll just use the frozen--but maybe frozen pesto tortallini!

Grandma Johnson's Scones

I made these scones with cranberries and white chocolate chips as suggested by other reviewers. INCREDIBLE! Everyone loved them! Not too crumbly or dry, and ohhh sooo good! I'll definately be trying some other flavor combinations too! UPDATE: Use bread flour instead of regular AP and they turn out so nice and fluffy! Try it!

Excellent dip! Very rich. I used 2 6 oz. cans of crabmeat and I could have used (and will from now on) used 2 more--it didn't seem very crabby. But it was very good!

Butternut Squash Soup

Loved it! It's rich yet still light somehow. I think I put a little too much onion in it the first time. Also using a hand blender makes life a lot easier than using a food processesor. And I added a few tablespoons of cream just to make it a smidge richer.

Angel Chicken Pasta

Reviewed: Jan. 5, 2006
Whenever I ask my husband what he wants for dinner he says Angel Chicken Pasta--even if we just had it the night before! I use chopped green onions and regular cream cheese instead of chivey cream cheese. I usually add mushrooms too--just because I'm a shroom fiend.
