About this Cook
Working Mom - Though I love to cook, and am told that I am a great cook, don't always have a lot of time to do what I would like to with daily meals. I am however A HORRIBLE baker / desert baker. I blame my oven, but fact is, I am terrible.
My favorite things to cook
Pasta dishes and any food with tons of flavour
My favorite family cooking traditions
Experiment and substitute; my Mom is a fabulous cook who rarely follows recipes and frequently invents her own. I've modeled myself against this style of cooking, and it seems to work!
My cooking triumphs
The recipes I concoct based on taste alone in restaurants; specifically pastas - I can replicate just about anything pasta - these are the most positive reviews I get from dinner guests.
My cooking tragedies
As above - anything that involves baking; invariably tragic.

Turkey and Stuffing Casserole
Very tasty! Not the prettiest when served, but yummy nonetheless. I used ground turkey and stove top (2 boxes) stuffing, and added onions to the turkey while I browned it. Both my husband and father in law loved it - Hubby said "it's a keeper"

Fried Green Tomatoes
Wonderful recipe... First time for both my husband and I, trying fried green tomatoes and we BOTH loved it. I also substituted bread crumbs for the soda crackers, and added garlic and onion powder to the dry ingredients. I did however need 3 eggs, and needed to clean my frying pan between batches, as the butter and coating blackened, even on medium heat. (It took me 4 batches to fry them all, and I cleaned between 2 and 3).

My Mom's Sausage & Rice Casserole
Average, at best. My 12 year old said it looked horrible. I found the 90 minute cook time to be excessive - we like our rice and pasta to be al dente, and this was one step above mush. If making it as a main dish, definitely double it - at our house, it served 3, and these were not generous portions. Also, a word of warning: choose the LEANEST POSSIBLE sausage. Even though I sauteed and drained it first, it was a very greasy dish. Overall, it was edible, but not fabulous.
