Sweet Pumpkin Seeds

I've always done roasted seeds with salt and decided to try a sweet version this year ... this recipe was pretty good, but not really what I expected. They were very well coated and crunchy - almost like a caramel corn, and if you ate them with your eyes shut, you'd be hard-pressed to know there was a pumpkin seed underneath. I think they would have been fine without the last one or two coatings. I did not have parchment paper and just used a lightly greased cookie sheet and it seemed to work out okay.

Quick Turkey Casserole

Easy recipe because I had all the ingredients on hand, but it didn't go over well with the family. It was okay - the rice and turkey part was pretty typical; as another review said, the cornflake & onion topping make the dish. However, I thought the sugary onions and cream cheese just ended up giving an odd flavor combo to the turkey and rice ... the sweetness seemed a little out of place.

Poke Cake III

We had high hopes for this cake and made it for a 4th of July-themed get together. It was easy enough to make, but we did not care for the taste or consistency. We used "berry blue" jello which smelled good and gave the cool red-white-blue combo we were going for, but in the final product it made the cake taste sort of medicinal. Also, the cherries seemed to give the cake a mushy texture. Just not a bit hit - unfortunately. Maybe we'll try again with cherry flavored jello and skip the canned fruit.

Real Italian Calzones

Dough was tasty; although, pretty sticky to work with so I was generous with additional flour. I used 1 cup moz and 1/2 cup of cheddar and did everything else as written. I have to say 1 T of dried basil is entirely TOO much! I cannot believe no one mentioned this in other reviews. I would cut it back to a teaspoon or less - otherwise it is just too overpowering.

Juicy Peach Crisp

Absolutely fantastic! I only had 4 peaches, though, so I threw in some frozen raspberries (maybe 3/4 cup). I only used 1/2 cup of the white sugar, and I also reduced the flour to 1/2 cup and added 1/2 cup of oats instead. A HUGE hit!!

Cranberry Muffins

Fantastic muffins! I made them in the evening and they were pretty good right from the oven, but we all thought they were way better the next morning! (I stored them covered for the night). I made a few small changes: reduced the white sugar to 3/4 cup, used fat-free vanilla yogurt instead of sour cream, and added 1/4 cup OJ. I do think that there was a lot of batter and had I filled the cups only 2/3 of the way I probably could have stretched it to 18 normal size muffins - but I squeezed it all into 12 and the muffin tops just sort of spread out. I only baked them on 350 for about 20 minutes.

Pork with Mushroom Dijon Sauce

Pretty good. I didn't have any white wine on hand so I used cider vinegar. Also - I used regular mushroom soup. It had a nice kick to it and their was plenty of sauce to cover noodles, rice, etc.

Butterscotch Bread Pudding

This is a fantastic recipe! I used 8 old hotdogs buns and it turned out great! The only changes I made were to use one cup of brown sugar instead of two, and since I didn't have any butterscotch chips, I substitute with cinnamon ones. Then I added 1 t cinnamon and 1/2 t nutmeg. It was wonderful warm, room temperature AND cold from the fridge. I will definitely be making this again!

Texas Sheet Cake V

This is an awesome cake! SO very moist and chocolatey!! It is simple to make and uses ingredients I typically have on hand. It comes out perfect every time and always gets rave reviews when I make it for potlucks and such. TIP: Maybe this goes without saying for some, but I sift the cocoa and the powdered sugar before using to minimize the clumps and lumps.

Cinnamon Rolls III

This recipe is outstanding! I follow it with all the ingredients as written. I have made them with the overnight directions provided in an earlier review, as well as the morning of way as is directed in the original recipe - both ways are a total hit! If I could give this more stars, I would - they are really THAT good as so worth the effort!! The only thing I do differently is to cut the rolled dough into 15 pieces because it fits better in a 9x13 pan to do three rows of five.

Baked Potato Soup

Okay - I guess I misread this recipe . . . when it says "baked potatoes" I thought it meant potatoes you would normally use as baked potatoes. It must mean potatoes that have actually already been BAKED, though, otherwise, the potatoes will be really hard - trust me. Soooo - just in case anyone else out there has a brain blip like me: make sure the potatoes are baked before adding them to the soup!! Other than that, I think it was a tasty combination of ingredients.

German Chocolate Cheesecake

This cake is incredible! I have made it a couple times and it always gets rave reviews. I wish it weren't so sinful (loads of eggs, sugar, cream cheese, etc. - and the ingredients can be a little pricey, too) because I would definitely make it more often. The only change I have ever made was to use walnuts instead of pecans once and it still tasted great.

Mexican Lasagna II

This was a very simple but tasty recipe. I followed the directions as written except I only used one can of beans and we thought that was plenty. We also added some diced jalapenos in with the cheese layers. Yum! Per the suggestion in another review - I put a layer of the tortillas down first on the bottom of the pan which I think probably made for easier scooping out and clean up afterwards.

Pumpkin Chocolate Chip Muffins

I doubled this recipe to make 2 dozen muffins. I made the following changes to the recipe: applesauce in place of the oil, I used the entire can of pumpkin and the whole bag of chocolate chips. I also just used PAM spray rather than liners or shortening + flour in the pans. I followed the other reviews and only set the oven to 350. They were done in 20 minutes and tasted fabulous!

Banana Chip Muffins

These were pretty tasty. A little on the spongy-side but I liked that they weren't crumbly so my kids didn't make a mess eating them. I was trying to make healthy muffins and was searching for one that used applesauce, so I was a bit surprised that this one also called for oil. I decided to leave it out and used a whole cup of banana instead (about 3 medium bananas). I only had a half cup of the chocolate chips - though I'm sure it would have been great with more.

Chewiest Brownies

It was a tasty brownie, but certainly nothing special to look at. It reminded me so much in taste, texture and appearance of a boxed brownie, that in my opinion, you may as well just save yourself a few steps/ingredients and make the box mix.

Granny's Banana Bread

I followed the recipe exactly as written and my loaf came out very spongy. I think another reviewer had mentioned theirs being gummy and that seems to have been the case with us, too. I'm not really sure why it turned out this way. I suppose the bread could be described as "moist" in some way - which I'm not opposed to - but the texture just wasn't right, and frankly, I didn't find the flavor to be all that great, either.

Chocolate Chip Bars

These were a big hit in our house and so much less time consuming than dropping cookies. I definitely agree with the previous post that you need to use a jelly roll pan if you want these to be more bar-like than cake-like. I also used 3/4 cup of each kind of sugar (brown and white), as well as one stick of margarine and one stick of butter in place of the shortening. I thought one cup of chips wouldn't be quite enough for our liking, so we used the entire bag. They came out awesome!! We will certainly be making these again when mom is feeling lazy and/or we are crunched for time!
