Salsa Chicken
This is one I go back to many times. Good with rice or mashed potatoes. I use more salsa, extra for the rice or potatoes. Even good without cheese and sour cream but the best way is as stated in recipe.

Shredded Beef Chimichangas
Good oven Chimichanga. I used leftover "Salsa Chicken" as filling.

Sweet Potato Casserole II
very yummy. once I made without the topping (lack of ingrediants)it was still really good BUT better with the topping.
