Cornbread Pancakes

Delicious recipe! I'm keeping this! A couple things I did wrong (not because the recipe told me so!) that I wanted to share, just in case: *Don't mix the butter in with the flour and cornmeal first! If you do, you'll get lots of little lumps of cornmeal/butter floating in floury milk. I don't know HOW I thought this would work... but it was not good. I blended the sucker with a submersion blender and then it was all good. *Coarse, stone-ground cornmeal makes for VERY crunchy pancakes! Again, this problem was mostly solved by the submersion blender - but next time I'm sticking to something finer ground. The batter doesn't cook for as long as cornbread, so I think the cooking time doesn't give the really coarse cornmeal grains a chance to soften. Those mistakes were my own, though, and not the recipes's - these suckers taste delicious! Thank you!

World's Best Lasagna

Totally delicious! I left out the tablespoon of salt, though - and when I made it with no Italian sausage, I added about 1 1/2 tsp.; when I made it with Italian sausage, I didn't add any (and both times I used sodium-free tomato products). I think it's important to taste the sauce and then add salt. You're mixing in plenty of salty cheese, so I think it's good to go light! I also tried adding in a chopped bell pepper to the sauce - and that was delicious too. I also add rice wine vinegar (1/8 cup?) and some sage. Also, I make two layers of noodles, 3-4 noodles per layer, and that works great! Thank you - a definite keeper! Totally delicious :)

To Die For Blueberry Muffins

Wow! Okay, delicious - sweet (but not too sweet), cake-like but still a muffin, and oh my god the streusel just seals the deal... I'm keeping this recipe! I doubled the recipe and got a very full pan on muffins (12) plus a loaf pan. I used a 1/3 measuring cup to fill the muffins and that was a little much - my ONE complaint, it was hard getting these over-flowing suckers out of the pan! I used only one batch of streusel for my double batch of muffins and it was GOOD - but I think more streusel would've done the trick too! I put in close to double the blueberries (almost 4 cups - quadruple, really) and this was really, really good - taste-wise, definitely not a mistake - but it did make the muffins look more like cobbler than muffins. So many berries! They were little tiny ones (Alaska bush berries!) so that might've been part of why the berries sort of took over with my muffins. Thank you for a delicious recipe! Got lots of good reviews from the eaters :) I suspect I'll be making these again soon.

Glazed Apple Cookies

Mmmm! Moist and delicious; the frosting was a perfect finish. I had some kitchen problems which led to a few changes... I realized midway that our refrigerator was broken, and the eggs had probably gone bad, so I used 2 Tbsp. soy flour and 1/4 cup water instead - weird, but the cookies ended up delicious so I guess it worked :) I also used butter and pecans, and I baked these as bars in a jelly roll pan for about 30 minutes. I bet the original recipe would make great cookies too - I will try it again when things are less crazy in the kitchen. Thank you!

Bran Muffins a la Brian

Yum! Sweet, very tender, and delicious. I used nectarine sauce for more of the oil (random, I know), but that tasted really good! I also went generous on the raisins. Keeper! Thanks.

Winter Energy Cookies

Oh man... these are fantastic! I'll keep making them just because they're delicious, never mind healthy :) I subbed applesauce for half the butter like folks said, and the PB as well (I don't like it). Two other changes - I used equal parts 7 grain mix, wheat bran, and white flour - just because it was all I had, but yum! Also added cranberries and almonds, and I think that really worked... Oh, these are so good! I'm going to try making these again with different kinds of grain - maybe buckwheat? Thanks so much!

Millet Muffins

Yum! I AM guilty of changes - half applesauce for the oil, ground oatmeal and seven grains for the millet and part of the flour, and I also added walnuts, raisins, and cranberries. But - excellent whole-grain taste and very moist, tender, and just a little bit of chew; a great base. I'll definitely make again! Thanks :)

Caramel Shortbread Squares

Very tasty - pretty much like a twix bar. I cooked the caramel according to the water test, not these instructions, so I can't vouch for them. Extremely important: cut at room temperature! The chocolate just cracks off if you try to cut them from the fridge. Thank you!

Grain and Nut Whole Wheat Pancakes

Banana Pancakes I

Holy monkey! These were outstanding... cooked up big and delicious and fat! I used very ripe bananas, which I hear is important - it sure seemed to come across here. Oh, also - they're not particularly sweet on their own. It makes them perfect with syrup, but if you have other plans you might want to adjust the sugar. Thanks so much!

Chicken Jambalaya I

Butter Rich Spritz Butter Cookies

Perfect! I've been searching for a fabulous spritz recipe for a while, and this is the one. If you use salted butter, I recommend halving the salt. I also like to cook them a bit longer, until the tops just brown - best flavor that way, I think. Thanks!

Scalloped Potatoes and Onions

Creamy deliciousness... wow, yum! I cooked the onions with the garlic and then made the roux around them - worked great, and I think it helps to take out the raw onion flavor. Oh, I also used beef broth, went easy on the salt (glad I did!), and added a little rosemary and red pepper flakes. Yum, I'll stick to this!

Triple Chocolate Chunk Cookie

It was good, but I don't think I'll make it again - I think cinnamon was really at the fore instead of the three chocolates. Not that cinnamon and chocolate are a bad combination - but it's very strong.

Apple Pie Muffins

Yum! I've made these both with and without the streusel (sprinkled sugar on top of the bare ones) and it was delicious both ways. Also, one time I went a little overboard on the apples and it was more like 3 cups, and that was pleasant.... although they're excellent just as is. Thank you!

One Bowl Brownies

I'm surprised no one else has mentioned this - maybe it's because I used unsalted butter - but these tasted flat to me! Otherwise very good; next time (there will be a next time) I'll add a tsp. of salt.

Delicious Raspberry Oatmeal Cookie Bars

You can sub the oatmeal out with ground almonds, too - yum! Good, solid recipe. Oh, and I find slicing when they've just come out of the oven works best - that way nothing's got all sticky or brittle yet.
