Wow! Okay, delicious - sweet (but not too sweet), cake-like but still a muffin, and oh my god the streusel just seals the deal... I'm keeping this recipe!
I doubled the recipe and got a very full pan on muffins (12) plus a loaf pan. I used a 1/3 measuring cup to fill the muffins and that was a little much - my ONE complaint, it was hard getting these over-flowing suckers out of the pan!
I used only one batch of streusel for my double batch of muffins and it was GOOD - but I think more streusel would've done the trick too!
I put in close to double the blueberries (almost 4 cups - quadruple, really) and this was really, really good - taste-wise, definitely not a mistake - but it did make the muffins look more like cobbler than muffins. So many berries! They were little tiny ones (Alaska bush berries!) so that might've been part of why the berries sort of took over with my muffins.
Thank you for a delicious recipe! Got lots of good reviews from the eaters :) I suspect I'll be making these again soon.
