Tres Leches Cake

Soooo delicious. I added more sugar to the whipped cream- do it to taste. I actually made two at the same time, since I prepared them for a Spanish oral presentation that I had for class. Everyone loved it- even one Mexcian classmate, who said she usually hated tres leche cake (It was my first time tasting it) liked it. You're in for a VERY sweet treat. I topped with strawberries (see the picture). It is a bit tedious to make, so make sure you have time to make it, but the end result is rewarding.

Salsa Chicken

Very good and sooo easy. I used mild salsa (I'm a wimp with spicy foods) and it was just a tad spicy, lol. Followed recipe exactly, but didn't use as much cheese or the sour cream. Will make again.

Surprise Burgers

Simply delicious. I used fresh pineapple cut into chunks. My only recommendation is to cut up the pineapple into very small pieces or to used crushed pineapple, since the big hunks undermine the moistness and texture of the hamburger. I love the sauce- I might just use it on my hamburgers and skip the pineapple if I'm in a hurry.

Super Easy Salmon Cakes

I used salmon that we canned ourselves. They ended up dry and somewhat bland, surprisingly. I substituted lemon juice and parsley and pepper for the lemon pepper. Also, only made 4 patties rather than 8, since 8 would be tiny.

Beef Tenderloin With Roasted Shallots

My mom really loved this, saying it was "excellent" and better than her own gravy. However, I found it too salty, which she attributed to the wine, saying it was a "different flavor" rather than salty. I don't think the taste is worth the prep time. The bacon does wonders for the gravy though. Thanks!

Wonderful Banana Cake

Very light, moist, and tasty. Especially easy to make. I followed the recipe exactly, except I cooked for about 50 minutes in a non-preheated oven. The top will get a little brown, but don't worry about it. Topped with powdered sugar so as to not overpower the banana taste. Tastes like banana bread, but lighter and sweeter.

Attitude Chicken

Delicious, although it dirtied up quite a few pans and you have to keep an eye on everything at once. It is quite filling though, and has a unique taste to it. I would definitely make it again, and plan to prepare it for my family when I return home from college. I would keep my alteration of more garlic too. I had to pare it down, so I cut the recipe in half, and changed it up slightly based on what I had on hand and personal taste. I used 2 chicken thighs, 1/8 cup of chopped onion, 2 garlic cloves, 1 1/4 cup sliced mushrooms, fat free italian dressing, healthy choice cream of chicken soup, and actually left out the salt and pepper, which had no detrimental effects on the taste- it was still really good! I also used fresh broccoli, which I simply softened in the microwave, and rotelle pasta. The chicken mixture doesn't look that "pretty" so I wouldn't use it as a presentation piece. It tastes like chicken strogonoff with some zip. : D Definately give it a try.

Balsamic Mushrooms

These were ok. They were decent hot, and better cold. The tang of the balsamic vinegar was especially noticeable, so if you like balsamic vinegar, give this a try.

Puerto Rican Garlic Marinade

Delicious. Very flavorful. I marinaded 4 chicken thighs for 8 hours and cut the recipe to 3 servings. I cut down the pepper to about 3/4 a teaspoon (for 3 servings) and only had about 1 teaspoon of minced garlic (cuz I was out). It was a bit oily, but overall, exceptional taste and very easy. I baked it in the oven for 45 minutes at 350. Might add boiled baby carrots and potatoes next time around to soak up some of the flavor.

Golden Sweet Cornbread

Delicious. I made it for a potluck, and everyone loved it. The bread is a bit more crumbly than most, but that is the extent of its faults. I used a 9x9 square glass dish, and it was still declicious. When I return home (I'm in college) I'm going to challenge my Mom's cornbread with this recipe. : D Thanks!

Irresistible Irish Soda Bread

Very good, especially when toasted with butter. The consistency reminds me of cornbread, and it is somewhat a dense bread. I've never made soda bread before, but wanted to celebrate St. Patrick's Day. Wrapping it and leaving it overnight really does add to the depth of the flavor. I followed the recipe exactly. Very fresh tasting.

Cinnamon Sugar Cookies

Nothing special. The dough was somewhat dry and hard to work with. Sprinkles taste much better than the cinnamon sugar. Good though for last moment cookies. My roommate like them a lot, but she likes anything with cinnamon. : D Give 'em a try.

Italian-Style Spaghetti Squash

I loved this. It was amazing and reminded me a lot of lasagna. I used 1 spaghetti squash, and altered the recipe a bit. I didn't include zucchini or lemon. I substituted 3/4 can of stewed tomatoes for the tomatoes and added 3 cloves of garlic. My twin also thought it was delicious. Definately more of a lasagna taste than a spaghetti taste though.

The Easiest Blackened Chicken

Beth's Orange Cookies

First, the bottom of these cooked much more quickly than the tops, so I had to take them out sightly before they were done in order to keep the bottoms from blackening and ruining the cookie anyways. Without frosting, they are somewhat dull, with a slight citrus tinge. The frosting makes them so much better, although the recipe doesn't make enough to cover all the cookies. I halved the recipe overall, which might account for the burning tendency of the bottoms. Overall, they had a unique flavor for a cookie, but are not worth the work.

Cheryl's Spinach Cheesy Pasta Casserole

Decent. I froze it, dethawed it, and cooked it, and it turned out ok. Nothing too special, and mine was a bit watery, although that may be due to the freezing. It tasked fine, and I did like how it didn't mix dairy and meat, so I could cook it for my Jewish roommate.

Forgotten Kiss Cookies

Delicious. These were crunchy from the sugar on the outside, yet warm and moist on the inside. And the cholate kiss gave it such a perfect finishing touch. I put these in Christmas goody bags for my friends, and this cookie kept on getting complimented. Thanks!

Baked Sesame Chicken

Quick and easy to make. Very moist and juicy. I cooked 5 chicken thighs for 50 minutes at 375. I didn't toast the sesame seeds prior, but they toasted quite a bit in the oven. You could taste the soy sauce which made it much better, but the sesame seeds gave it a slightly unpleasant texture.
