About this Cook

I am a mom to three kids-1 daughter, and boy/girl twins. I'm 35 years old. Cooking is my only true art form--I'm not very creative otherwise.

My favorite things to cook

When time allows, I love to do things (pies, salsa, pesto-anything) totally from scratch with fresh ingredients--especially fresh herbs, fruits, and veggies.

My favorite family cooking traditions

Anything southern Louisiana--Gumbo, different ways to do seafood, jambalaya, we do the best holiday meals! I am on the phone constantly with my grandmother, aunts, and cousins finding out how they did this or that.

My cooking triumphs

My very first pie that I made with fresh pumpkin and a homemade crust--my kitchen looked like a cyclone hit it.

My cooking tragedies

My cooking failures include a shrimp stew that turned out thicker and harder to stir than ice cream from Antartica. Just a few weeks ago, I made this beautiful king cake. It took ALL day. It was AWFUL!!

Spinach-Stuffed Flounder with Mushrooms and Feta

Excellent!!! I added chopped tomato and per the reviews I added garlic, and probably 1/2 cup feta. I also coated the fish with mixture of bread crumbs, Paul Prudome Seafood Magic and Tony Cachere's creole seasoning. I covered it with lemon and butter. You must drain off the moisture from the stuffing mixture (I may even strain it next time) or you will have a mushy problem. I baked it longer than 20 minutes--maybe 30. It was so good--and healthy!!!

Cream Cheese Sugar Cookies

This is an easy recipe, and cookies are good. I had no problem rolling it out and cutting the cookies--I floured my surface and patted flour on the dough. I didn't chill it for 8 hours though, just maybe 1-2 hours-it gets pretty hard. I wanted to do something fun with my 5 year old and this was a fun little project for her with cookie cutters and sprinkles. To get 72 cookies though, you would have to have very small cookie cutters b/c we only got about 2 dozen cookies. I did not think the cookies were 'to-die-for' good. If I do it again, I will not add the almond extract as I think it is a little overpowering. Maybe frosting them makes them way better, but that is more work than I want to get into.

Walter's Chicken and Mac

Thanks for such a great recipe!!! My 5 year old asked for seconds which NEVER happens. I made the following changes-used only 1 cup of shredded cheese, added a can of Nacho Cheese Soup, used 1/2 cup milk and 1/2 cup half and half, added green onion, and covered with American Cheese. I boiled chicken breasts with taco seasoning and garlic salt. There are lots of ways you can take the basic idea and make several different dishes--definitely a keeper!
