Raspberry Cup Cakes

Like individual raspberry ice cream treats, only better! Delicious! I also made this recipe with 1/2 c red raspberry jam and 1-1/2 tsp lemon juice (to replace the raspberry puree), and I reduced the condensed milk to 1/2 c to reduce sweetness. Turned out great. For the sauce on top, I used 1/3 rapsberry jam, 1 tsp lemon juice, and 1 tsp water.

Delicious Pineapple Muffins

Yum! This recipe yielded 12 muffins for me, and they were moist and tasty. Next time I'll also add a little pineapple to the batter, and only soften the butter to mix in the crumb topping to make it more crumbly.

Libby's® Pumpkin Cranberry Bread

Yum, yum, yum! This bread is perfectly moist, and has a great flavor. The cranberries are tart, but I like them with the pumpkin. I may try it with Craisins next time. Also made great mini loaves for gifts over the holidays.

Praline Sweet Potatoes

Yummy! Huge hit for Thanksgiving. I used one large can (40 oz) and one small can (15 oz) of Bruce's Yams, and it was just shy of four cups. I beat the eggs and cream together before adding the other ingredients. I reduced the vanilla to between 2 tsp and 1 tbsp, and it was just right (I made this once before as written, and they had a bitter flavor from the vanilla). I put most of the potatoes in an 11x7 dish, and the rest in a 10 oz Pyrex (otherwise, the 11x7 would have spilled over in the oven. These were delish!

Texas Ranch Chicken

Mmmmmm good! Everyone liked it! As others recommended, I used PAM in the pan. I put season salt on the chicken tenderloins first, then topped with bacon and the ranch dressing. Covered the pan with foil and baked at 325 for about 30 minutes. Then topped with cheese and baked 10 minutes more uncovered. The chicken was so moist! Thanks for this easy recipe!

Cheddar Bay Biscuits

Easy and oh so tasty! I just added 2 tsp of garlic salt to the melted butter...it was a little too salty, so next time I'll just do 1 tsp. But they were still very good... everyone wanted more.

Meatball Grinders with a Yummy Sauce

Yum, yum, yum! I made the sauce as directed, and added about 50 oz of meatballs in my crockpot to take to a covered dish meal. These meatballs were gobbled up. The sauce was great, and there was plenty of it! We can't wait to try them on hoagie rolls next time.

Orange Fluff I

This was very good. My husband, who does not like cottage cheese, did not care for this recipe. But I liked it, and wouldn't change a thing. I made sure I drained the pineapple VERY well, and the fluff lasted a couple days before it started breaking down. Thanks for the recipe!

Yummy Pink Punch

This punch is yummy. I served it for my daughter's first birthday party, and it was a pretty pink for her princess party. This punch is sweet, but I like it that way. And very easy to make.
