Maple-Balsamic Vinaigrette

Loved this recipe. I adjusted the recipe a bit because I use it sparingly - I used a 1:1:2 ratio for the maple syrup, balsamic vinegar and oil respectively. Used this on my fav salad with greens, goat cheese and dates. Perfection!

Very Chocolate Ice Cream

Great recipe -in the words of my brother who knew home made ice cream could taste so rich! I added some crushed oreos to ours at the request of the kids and it was just incredible!

Ninety Minute Cinnamon Rolls

BEST. CINNAMON. ROLLS. EVER!!! WOW -these were just great! I did use fresh buttermilk that I had on hand and used 75% butter and 25% shortening. I baked them in a small glass baking pan and frosted them with some cream cheese frosting. These went super quickly at my house!

Soft Sugar Cookies IV

This was just an awesome recipe!! I don't know what I can say that hasn't already been said!!! I did make some modifications substituting 1 cup of whole wheat flour, adding a tad more baking powder and using raw sugar. They turned out great!! I did skip the part about rolling them in sugar, and I'm glad I did because I thought they were plenty sweet enough -or maybe that's just the raw sugar. I will try to use 1 cup butter and 1/3 cup shortening in my next batch.

Balsamic Roasted Pork Loin

This was a great recipe. I always have trouble with my pork loin -it never seems to come out tender enough for my young toddler (15months old) to chew -so we eat tenderloin mostly. There was a sale on pork loin this week and I decided to try another pork loin and this recipe was amazing. I made some changes: I used 1/4 cup white wine vinegar and 1/4 cup white balsamic vinegar (because we were out of my regular balsamic vinegar) I also didn't have steak seasoning, but I found the ingredients list and so I added salt, pepper, garlic powder, paprika and rosemary. I marinated it all day and then roasted it that evening -it was so tender!! I could not believe this was my pork loin!! Because I used white balsamic vinegar I didn't need to add anything to make my drippings into a wonderful sauce for the pork! The only thing I had a problem with was the temperature. Pork cooks to 170 -175, not 145 as stated in the recipe. Even with standing and tenting, that would not be cooked enough. It took me about 1 3/4 hrs for my 3lb roast to cook and I had to jack the temp up to 375 after the first hour because I was running late by that time. I'm still giving it 5 stars though!

Garlic Top Sirloin Pot Roast

WOW -i am so disappointed in this recipe! I followed it as is thinking after that I'd try some of the suggestions in the comments - but my meat was dry and some pockets tasted bland, some tasted decent and others had too much garlic. This was a piece of beef that I cut and used half in another recipe and it was quite tender, so I don't think it was my cut of meat. If I try it again, I would rub with some flour and brown it first, add some strained tomatoes, balsamic vinegar or something to help break down the meat. It really doesn't even get another try from me though.

Zucchini Bread III

I love this recipe. I make it for my kids and they just love it. I make it as mini-muffins -which bakes in about 15 mins. I did make a few of the suggested adjustments - I cut sugar in half I used instant oatmeal instead of wheat germ Use 1/2 cup oil and add 1/2 cup applesauce. If using coconut oil (which I do)- add last. Omit nuts and raisins (just because my kids are still young), I'll be working on some flax seed additions the next time around. Great recipe though!

Texas Caviar I

I just made this for a party and got raves reviews. I skipped the coriander and bell pepper, I took another reviewer's advice and used a small can of petite canned tomatoes. I only added about 2-3 oz of zesty Italian salad dressing and added the juice of one very juicy lime. I was sure to drain and rinse the beans before I used them so they were not too sticky. This one is a keeper for sure -easy and yummy!

Banana Cake V

I made this as cupcakes for a first birthday party and it was GREAT! I tried it the weekend before and made some changes for the final batch. After creaming the butter and sugar and adding the eggs, I stopped using the mixer and only beat it by hand. I did use cake flour and that made a huge difference and I guesstimated that 2 bananas would be 1 cup. It was just awesome -the cakes were light and fluffy and full of flavor. I topped it with the whipped cream cheese frosting also on this site.

Whipped Cream Cream Cheese Frosting

This recipe was sensational. I made it for a birthday party and everyone raved about this frosting. Even my mother-in-law -who was trying to convince me that I should just mix the cream cheese with the icing sugar and go that route. I'm so glad I didn't. I did use about 1.5 cups of powdered sugar instead of regular sugar. I whipped the cream first and then stuck it in the freezer while I beat the cream cheese and powdered sugar. It was super easy to make and it tasted so great. I would make this as a fruit dip in the future.

Rainbow Pasta Salad I

I gave this 5 starts BUT I used all the suggestions from the other reviewers -but it was AWESOME. It got rave reviews when I took it to my BBQ and DH is asking for it again. He said it is better than my old pasta salad that was so much more work! I used a combination of creamy italian and a zesty italian vinegarette. More creamy italian than vinagerette. I used about 3/4 bottle combined. About 7 oz of creamy and 4 oz of the vinegarette. I added about a cup of artichoke hearts, 1/2 a bottle of vlassic zesty pepper rings, and a 6oz bag of sliced sun-dried tomatoes. I left out the broccoli and the pepperoni. I chilled it over-night and it was even better the next day. This one is a keeper!

Whole-Wheat Chocolate Chip Cookies

This is a great recipe. I did tweak it a bit for my taste since when I made it as in the recipe it was a bit dry. I reduced the brown sugar to 1/2 cup replaced the 1 cup of all-purpose flour with 1/2 cup oats (although i might try 3/4 cup next time) I increased the baking soda to 1 tsp and reduced the choc. chips to 1 cup. The end result is a bit more hearty because of the oats and a little less sweet. I froze a bunch of the batter and I pull them out when I want a nice warm treat!

Whole Wheat Banana Nut Bread

This is a great recipe -very easy and very yummy. You don't really know that it is whole wheat either. The bread is not too sweet and not too banana-ery. It has a bit of a cakey texture, but that seems to be imorving with time. Per one reviewer's suggestion, tried it with 1/4 cup honey and 1/4 cup Splenda and it turned out great. I will make this again for sure!

Wheat Germ Whole-Wheat Buttermilk Pancakes

This is a great recipe. The pancakes turned out nice and fluffy. I added about 1/4 cup of splenda and I think next time I will add some chopped pecans. The recipe has a great nutty taste and I will make it again for sure. My husband wasn't going to have any since they were whole wheat - but then he tasted mine and asked me to make a couple more for him!

Baked Bar-be-que Chicken

I made this recipe for 30 people. It was easy and great. I sprinkled a bar-b-que rub on the chicken inseatd of garlic powder and I added some charcoal spice too. I used a doctored Tony Roma's Carolina Honey BBQ sauce (I doctored it adding some lite beer and coke). I will definately make this again. It got rave reviews and was so easy.
