Italian Rice Balls
to those having trouble with them falling apart: japanese rice might work. onigiri, rice balls, are really popular in japan and the glutenous rice really holds together well. i'd guess you could eliminate the egg in the mixture if you used it. make sure your hands are wet, so the rice won't stick to them, or just scoop one ball's worth of rice onto saran wrap and shape without ever touching it! (note: i didn't make these yet, but thought the tip might help. i'll re-review after making them.)

Almond Butter Icing
i changed this recipe to fit what i had on hand, i can't comment on the original (but it sounds good!)... i used 1/2c butter, 1/2pkg cream cheese, 1/2 tsp almond, 1 tsp vanilla bean extract. mix together in blender (about 3c). add sugar, 1/2 cup at a time until you get the right consistency. i tried to add milk, but it gets grainy. sweet, with a mild almond flavor. sooo tasty! great on cake-like cookies.

Holiday Milk Punch: the New Eggnog
it was my own fault, but i had problems with clumping. probably too hot. anyway, it was delicious! everyone at the party loved it. i even got a request to make it in summer!
