Banana Rum Cake

The cake recipe is perfect as written. I am not a big cake mix user as I prefer to make homemade, but I am not against using cake mixes either! I am giving 4 stars because the amount of frosting is way too much for me. I ended up using the 2 Tbsp of rum, the 1/3 cup butter and only 2 cups of powdered sugar and the frosting was just the right consistency. However, if making this again, I would halve the frosting that I made as it was enough for 2 cakes.

My Amish Friend's Caramel Corn

This is a really great recipe. I followed the main ingredients but substituted grey sea salt (used 1/2 teaspoon) and added a couple pinches of red pepper flakes to the syrup mixture before boiling. Gives the perfect balance of salty/spicy/sweet!

Chocolate Zucchini Muffins

these get 4 stars because I did not really follow the recipe exactly. I may have loved it if I had - but I just can't find it in myself to use a whole cup of oil in my baking. I followed the recommendation to sub 2 bananas for 1/2 cup of the oil. They were still very moist and I could definitely taste the banana in the muffin.

Italian Bread Using a Bread Machine

White Chocolate Macadamia Nut Cookies III

Awesome recipe. Turned out as I hoped. I went by the recommendation of using 1/2 butter flavor crisco otherwise I followed the recipe (well, I put in a few more chips because there was a little more than a cup in the bag.)

The only problem I had was the bake time is TOO long if your baking these at 375. I had to cut baking time down to 15 minutes. Otherwise, great recipe.

Oven Roasted Red Potatoes and Asparagus

Very delicious dish. Grumpy wasn't crazy for it but I LOVED it. I did cut the thyme and rosemary down. I thought 4 tsp each would have been way too much (like many other's here). I did use all the garlic though! YUMMY!

My Kid's Favorite Pork Chops

Absolutely awesome. I made as the recipe read but next time I would cut the butter down to a tablespoon and use fat free half and half. There was too much butter floating on the top. Even Grumpy loved it!

Pumpkin Spiced Latte

This was very delicious. I didn't have whole milk but I did have half and half and skim milk. I used half of each. I also didn't use the blender. I just frothed it up by hand. My dad had a cup with me and we both thoroughly enjoyed it. I will make this again for sure.

All-Day Apple Butter

This is something that is going to vary depending on a person's preference. I am giving 5 stars because it works! I used 3lb apples, 2 cups sugar, same amount of spice listed in original recipe. After it cooked down a bit I used my hand held blender and blended it all together. It took only about 9 hours in my slow cooker. Awesome way to make Apple Butter!

Bronco Burger

Whoa! I halved the recipe, used two jalapenos and about set my mouth on fire! I like spicy, but this was very spicy! Maybe I just got a burger with more jalapeno than others. I still love the recipe and will be keeping it in my file for future use. Only sub I made was italian bread crumbs in place of the crushed fritos. (but would try them if I had them around the next time I made these!)
