Shortbread Cookies II

Missing some salt - I added 1/2 teaspoon and added the zest of one lime. Dipped in chocolate (dark and white) and decorated with gold and pearl dust along with christmas colored sugars! Pretty cookie and quite fragile!

Crispy Mashed Potato Pancake

I have made potato cakes before and had them be way too soft. A lot has to do with the condition of your mashed potatoes when you begin. If your potatoes are on the wetter side, then as others have suggested here, its a good idea to add some Italian seasoned bread crumbs. I used 2 cups of mashed - I had made sour cream and chive mashed potatoes. They had sat in the fridge overnight so they were not super moist, but moister than I wanted if I were to add the egg for binding. I added 1/4 cup bread crumbs along with some of the garlic powder and skipped the Italian seasoning since it was in the crumbs. Next time I might add some extra though as it wasn't as flavorful as I would have liked. I made these into potato bites/small plate/appy sized. I used a small cookie scoop and dropped the ball onto a plate coated with Italian bread crumbs. I coated the ball with crumbs and flattened the cake out some. Served with a small dollop of sour cream, some crispy bacon and fresh chopped chives. YUMMY!

Spoiled Baby Back Ribs

I used the cooking method here while I did not use the sauce. I liked the cooking method - it seemed work really well and eliminated a greasy mess. I didn't bother with the sauce however I'm sure its good...I used Sweet Baby Ray's sauce. I give this 4 stars just for the cooking method.

Sweet Corn Muffins

I made this recipe without reading any of the reviews and wasn't surprised to find that I was not the only one who cut the sugar in the muffin. I went with 3/4 cup (for one batch) and next time I would go with 1/2. That said, they were still delicious, just a little bit sweet. They get 5 stars on their own just because they were not dry!!

Orzo with Parmesan and Basil

Great recipe. I modified it some, I only used 1 tablespoon butter and instead of chicken broth I used vegetable broth, and instead of Parmesan cheese, I used Asiago cheese that I freshly grated using a microplane zester (about 1 cup of cheese). It was DELICIOUS!

Eggplant with Garlic Sauce

This is a great recipe to start with. I like to use fresh garlic over dried - and when making Asian sauces I tend to go with brown sugar instead of white. I also switched from soy to tamari - however, as written I'm sure the original is great too! I loved this dish and am very happy to have found it. I've craved Eggplant with Garlic sauce many times over the years and now when the craving hits I have the perfect recipe! Thank you!

Crunchy Caramel Corn

Very good but be very careful cooking the corn with the syrup in the microwave. Stir it every few seconds (~10 seconds). Too long and it will burn. A quick and easy fix for a caramel corn craving!

Rosemary Zucchini Sticks

I cannot believe in all the years I have made breaded zucchini that I never baked it. How much more healthier is this! Loved it. I didn't use the rosemary, I thought it might clash with my seasoned breadcrumbs. Maybe I was wrong, but we didn't seem to need it anyway. I served these with marinara and ranch dressing. Yum!

Chunky Monkey Pancakes

The batter was a bit too think for me so I ended up adding an extra 1/3 cup of flour, then it seemed perfect. My first two pancakes I put on the griddle without the extra flour were very flat, after the flour, puffy and nice! I loved them, Grumpy said he could do without the chocolate....but he's picky anyway! Great recipe. :)

Moist Carrot Cake

This was a good basic recipe. I like many others here don't care to use so much oil so i used 1/2 cup oil and 1/2 cup of apple butter. I reduced the sugar to 1-1/2 cups and omitted the walnuts and coconut from the cupcake. I made a coconut flavored cream cheese frosting and toasted some unsweetened coconut to decorate.

Fluffy Canadian Pancakes

These were ok for me. My favorite still is the Fluffy Pancake recipe on here. My mom makes a pancake similar to this one and I love them when she makes them but I just don't make them the same way. Could just be because I love my mom's and so my own making of this type will not compare! All said, this is a good recipe so do give it a try!

Homemade Focaccia Bread

My first time ever making a Focaccia Bread. Turned out really nice - I combined some olive oil with fresh minced garlic, some maldon salt, brushed over top of the bread and then sprinked with fresh chopped rosemary. Very good!

This is a great recipe. I didn't use anise - but only because I was making them to give to my dad and I wasn't sure he would like it. I used half vanilla and half almond like another reviewer did. I will make these again myself for myself and use the anise! I love how perfectly these baked and cut!

Red Velvet Cupcakes

My not so red velvet turned out very delicious. After I started to make these I realized I only had pink food color. I used that but didn't get that "red" look. I will definitely make these again and have some red color! This cupcake is different from others I have tried. It has a heavier texture but isn't heavy (weight wise). I absolutely love it and it is a definite keeper for me.
