About this Cook
I'm a Navy Reservist in the Greatest Navy in the world! I've been cooking since I got my first apartment back in 2002 and had my own kitchen plus husband to cook for. Sadly, that didn't last but I do have my new guy to cook for now. I don't tend to cook for myself for some reason. I make due with Chef Boyardee when he's away.
My favorite things to cook
I love cooking ethnic food. Mostly Filipino food since I am half and then Mexican...which is my other half. But I love Thai, I love Chinese, I love Japanese, I love Italian, I love anything that isn't toooooo spicy or anything that would qualify as a dish on Fear Factor.
My favorite family cooking traditions
Every Filipino dish tends to start off the same, lots of browned garlic in oil and then onions. So I tend to always have the latter in everything I make. Boyfriend doesn't much care for rice so I make rice for me and potatoes for him.
My cooking triumphs
I've gotten the pasta realm down pat. I never get anything but compliments when I cook Italian. Another go fig- I am anything but Italian and that's what I cook best!
My cooking tragedies
I have numerous tragedies. All due to my thinking I'm on an "Emeril" level. I experiment too much. My taste buds tend to accept a wide range of flavors so I can't really tell what most people in general would like. I don't know how many dishes I've made that taste fine to me but fail when it goes into my boyfriend's mouth.

Guy Approved Meatloaf
The fatty content is scary but it is a delicious meatloaf. I tend to like my meatloafs sweet but decided to try this very manly flavored loaf. Good stuff, very boyfriend approved. I didn't use the bacon. I don't think it needed it, it was flavorful enough as is. And I didn't crunch enough crackers so I threw in some seasoned bread crumbs on the top to make the measurement even. I don't think that made much of a difference, I just didn't want anything to go wrong because I decided to experiment too much.

Dijon-Tarragon Cream Chicken
Very easy and very good. I used margarine instead of olive oil and the butter when sauteing the chicken. That's the only change and probably didn't effect anything. I wish I had made more sauce though and will do so next time. My boyfriend wanted more on his angel hair pasta. Otherwise a very enjoyable dish.

Tofu Parmigiana
Bland. I don't know. Maybe I did something wrong? I followed the recipe though without changes. My boyfriend will not touch tofu so I was forced to make some for him with chicken tenderloins instead. He liked the chicken but complained about the sauce. So that's why I gave it a two star rating rather then a one.
