Tex-Mex Turkey Soup

Great way to use up turkey. I added a can of diced green chilies to mine. I also added the salsa at the very end so it would not become to spicy for my kids.

Apple Pumpkin Muffins

Great muffins! Very moist, flavorful, and tasty. I think the recipe as is would make a great muffin but here is what I did different: I grated my apples and used brown sugar in the streusel. Things I will try next time are: a little less sugar, my apples were tart so I used the full amount but will cut back next time. I would love to try wheat flour next time. I will also replace at least half the oil with applesauce, there was a small pool of oil left in the bottom of my pan when I removed the muffin. Just don't think it needs that much. Overall, a really good muffin!

Chocolate Chocolate Chip Cookies I

Awesome chocolate cookie!!! I used half butter, half shortening but other than that I would not make any changes to it. I did use a bit less choc chips than called for. Thanks for the amazing recipe!

Chicken Stir-Fry

This was a great base stir-fry recipe! I actually did little to change it which is rare for me. I did add a bit of brown sugar as someone else suggested which helps cut some of the saltiness. I did increase the amount of sauce just a bit and used whatever veggies I had on hand. Simple and tasty. A great family meal!

Parmesan Fondue

Awesome fondue recipe!! Everyone loved it. It has nice cheese flavor and does not seperate after sitting for awhile. I have had a hard time finding a fondue recipe I love and this is it. We dipped french bread, steamed broc and calliflower, and grilled chicken. This will be added to my favorite list for parties.... for all ages!!

Dijon Chicken Salad

Very tasty! Even my young picky eaters loved it. I replaced about 1/3 of mayo with low fat plain yogurt. I did not have rolls for it so I added shell noodles to it. I also did not have celery so I added peas and cucumbers. No craisins but added chopped apple and pineapple. The mustard provided a nice base for the sauce without being over powering. Thanks!!!

World's Best Potato Salad

This was a great potato salad recipe. Very creamy. Few things I did different: I noticed many reviews mentioned how sweet it was so I cut back on the sugar. I did add some sweet pickle relish which added a bit more sweet back into it. I also added a lot more mustard than called for and cut back on the onion. The biggest change though, add salt to your water while the potatoes are cooking, do not wait until they have been drained and cooled. I did not add the salt to the water and I was kicking myself for not doing it every time I took a bite. The sauce is very good but I added a lot of salt to it and it still did not quite do the job that salted water would have. Overall, we enjoyed the end product. I will be making this recipe again!

Bunny Cupcakes

These turned out adorable! They were simple enough for my 5 and 2 yr olds to help and yet the end result still looks impressive. The only suggestion I would make is to be careful when cutting the marshmallow, do not cut 5 slices as directed. I would recommend 4 slices so they are thick enough to stand and not flop. My kids said they want to make these every Easter. Thanks for the idea!

Bake Sale Lemon Bars

Yummy! I used the shortbread crust recipe suggested by another reviewer. It had good flavor to it. I also used extra large eggs, 1T extra flour, and used 1/2c of lemon because many reviewers said it was too sweet but also wanted to avoid a sour lemon taste. I set my oven to 350. The crust and the lemon layer took longer to bake than directed at this temp. I have been craving lemon and this hit the spot. Thanks.

Amazing Whole Wheat Pizza Crust

We use this recipe all the time. It is one of the few things my husband will attempt and I have to say he does a better job with this recipe than I. We love the texture, taste, and the fact that it uses whole wheat flour. Sometimes we replace some of the white with even more whole wheat. I usually add a bit of italian seasoning and garlic pwd when I roll out the crust. We also use this recipe for calzones. Yum!

Macaroni Salad with a Twist

Thought this was a great recipe but added and adjusted a bit. I reduced the mayo and sugar some. I thought the texture and sweetness after refrigeration turned out just right. I also added olives, cherry tomato, hard boiled egg, peas, and a bit of pickle relish. I always sneak in as many veggies as I can for my family dinners. Thanks for the great recipe!

Spaghetti Squash Casserole

Mmm! My family all loved this one. Made my own changes. Sautéed garlic, fresh mushrooms, and onions. Added the cooked squash and a can of beef broth. Simmered till reduced and then thicken slightly with cornstarch/water. Added 1/2c sour cream. Poured in casserole dish. Topped with bread and parmesan. Baked as directed. This was a great recipe that will be a family regular in our home. Next time I will add spinach.

Oatmeal Peanut Butter Cookies

This is a great recipe! It is a very tender, melt in your mouth texture and the oatmeal adds nicely to the texture without over powering it. It has a great peanut butter flavor which we love. I normally use butter in place of margarine but I was out of butter so followed the recipe to a T. They still tasted great. I take mine out of the oven when I can tell the bottoms are browning so they do not over-bake. Thanks for the great recipe!

Scalloped Potatoes and Onions

Wow, love this recipe. 1. Basic ingredients I always have on hand. 2. So easy to make. 3. Tasty. 4. Most importantly, family friendly. Not only did my 4 and 2 yr olds love it but the adults did too. This recipe would be great the way it is but I wanted to make it a meal instead of a side so I did the following. Thin layer of potato, then layer of grated onion, carrots, and celery. Another layer of potato, then ham and cheese. One more thin layer potato, then sliced mushrooms. Poured sauce on then paprika. Thank you for this great recipe. We will be making this a lot!

Sloppy Joe Sandwiches

This was a tasty and family friendly recipe. We loved it! I used less ketchup, then added tomato paste and vinegar to balance out the sugar. I then thinned it out with V8 juice instead of water. I also used garlic, pureed onion, bell pepper, and celery and added with the hamburger. I sneak in as many veggies as I can for my young children, next time I will puree some spinach too. They were so excited they did not find veggies in it and ate every bit of it. thanks for the recipe.

Mexican Bean Pie

We really liked this meal. I gave it a five because it is a good base recipe to work off of. If you want it to be more interesting, make your layers more interesting. Mine were as follows. 1st layer, bean mix topped with nacho jalepenos. 2nd layer, sour cream and salsa. 3rd layer, bean mix. 4th layer, fresh salsa puree (tomato, onion, cilantro, garlic, salt in food processor). Final top layer, cheese and olives. Baked 30 mins. Only used black beans and refried beans. Added a little tomato juice to thin out mix. Topped with lettuce and guacamole. Yum! A great quick and easy meal.

Pumpkin Wheat Honey Muffins

This is a great whole wheat recipe. They were very moist and a lot sweeter than I was expecting. They were dense but that is normal for whole wheat recipes. I have only tried them hot out of the oven but my 4 and 2 yr olds loved them as much as I. I used a full cup of pumpkin, added some unsweetened crushed pineapple (drained) that I needed to use in place of the raisins, and only a 1/3 c honey. Took about 5 more minutes to cook than called for. I might add a little more spice next time. Thanks for the great recipe.

Apple Crisp III

This was a great recipe for apple crisp and a nice change from the usual oat version. My mother in law announced it was much better than the oat crisp and then later had to reassure her husband she still liked his but preferred this one. The changes I made were to cut my butter into my flour and sugar to keep it dry and not doughy. I also used some brown but mostly white sugar. I did cook mine a bit longer, just until it was golden brown on top.

Black Chocolate Cake

I needed a recipe to replace a favorite I could not find. Wow, this was the one. I love dense, moist, rich chocolate cakes and this was all that. It did not need milk or coffee that others recommended. I did replace the shortening with butter because I prefer the flavor. Thanks for the recipe.

It's Chili by George!!

I thought this was a great recipe for basic chili. I like a little more seasoning in mine so I added 1/2 a pkg of ranch mix. I also used kidney and black beans. Turned out perfect. I will be using this a lot.
