Best Ziti Ever
I made this recipe, but modified it because I was just being REALLY lazy and kind cheap :) I halved the recipe since everyone said it made so much food. I halved it and we still had enough left overs for a couple dinners! First, ground beef was cheaper at the store than sausage so I used that and threw in a little Italian seasoning. I just used jar sauce. I also threw in some sliced pepperoni, because that is what my botfriend likes. The only thing I will do next time is drain the ricotta a bit more and perhaps stir in and egg. But this is a GREAT recipe. Like Lasanga, but MUCH easier and much cheaper! I will definately make this agian

Creamy Rice Pudding
I have been looking for a baked, yet creamy rice pudding like my gram used to make. Tonight, I had a taste for rice pudding, but really didn't feel like waiting for the whole baking process, so I gave this one a try. It is delicious! Reminds me of the brand you can get and the grocery store in those little containers, but much richer. I used canned evaporated milk, which made a very rich dessert. I don't like raisins, so I didn't add any of those. I followed the exact directions and added a little cinnamon and nutmeg at the end. I had to try some warm. I thought it could have used a touch more sugar, but even without it it was great and may not be meant to be all that sweet. Another addition to my recipe box.

Mock Peanut Brittle
This was very good and easy! Tastes just like the real stuff except no messing around with that dran candy thremometer. Two suggestions: 1. Next time I will use a much lareger pan so I can press it thin, this time it was thinker and you almost cracked a tooth eating it right out of the fridge. 2. It would be great if you could add just a touch of salt so you could have the sweetness off the peanut butter and corn syrup and saltiness of the peanut butter also.
