About this Cook
I am a Food and Nutrition teacher. I do what I love! I do not go to work...I go to heaven. However...heaven even has rainy days to make you enjoy the sunny days that much more.
My favorite things to cook
I am cajun...I love to cook everything! Gumbo is my favorite.
My favorite family cooking traditions
Every year for Christmas my mother, sisters (2), and I have what we fondly refer to as "craft day". We get together and bake, wrap, decorate, and drink spiked coco for a whole day. We then give the goodies to family and friends. SIGH, it is great.
My cooking triumphs
Cake decorating! I taught myself the basics at 10 years old and decided to take classes at 25. I am so glad that I did! I have been decorating cakes now for 10 years...it never gets tiring or old. I now teach my Tech students the basics.
My cooking tragedies
The first cake I dropped 6 years ago. I had spent about a total of 200 hours working on that cake. I still want to cry thinking about it. I have not dropped a cake since.

Chocolate Chocolate Chip Nut Muffins
My high school students loved this recipe. After a few results we changed it up a bit. We did not mix in the chips-we started sprinkling them on top-they didnt sink to the bottom after that. We also added white and milk chocolate chips for variation. The actual cake taste was amazing!!! I noticed that in every single batch the tops did not round, but stayed flat. If they filled the cups to the 3/4 mark the batter, when cooking, would overflow the cup. I do not like this! I will play with the recipe to find the problem and report back.

Banana Muffins II
a great recipe!! The results from my high school students were amazing! We tested a few of the reviewers comments: added 1/4 teaspoon of cinnamon-these were more tasty but less of a banana flavor; using stand mixer to mix instead of by hand turned out more dry and didn't rise as much; adding nuts gave it more texture; 1/8 t cinnamon & 1/8 t nutmeg & walnuts and stirring was the favorite of the class-more flavor, texture, but still a great banana flavor.

Quick and Easy Brownies
I made 2 batches of this recipe...the first I made with only 1 cup of flour as per suggestions from others and the second I made following the original recipe. I liked both but prefer the more "fudgy" recipe using less flour. The original recipe is great but tastes like a chocolate cake...which I will start using as my new chocolate cake recipe!
