Breakfast Pizza I

I didn't have a pizza pan so I used a 9x13 and it worked perfectly. I'm sure it was even easier than a pizza pan since the rolls are already in a rectangular shape.

Fabulous Wet Burritos

Great burritos, even my step daughter said these were "amazing!". It sure made a lot of sauce even though I was pretty generous when serving. I froze the leftovers to save for the next time I make these.

Cheesy Ranch Potato Bake

Mmmmmm! I didn't have any problem with my potatoes being greasy like so many other reviewers but I did forget to cover them the first 40 minutes of baking so maybe that helped. I didn't have co-jack so I used a Mexican blend figuring it tied in with the chili powder. Thanks for the recipe!

Gourmet Chicken Pizza

Yum! We really liked this pizza! I really do not like canned pizza dough so I used the Basic Pizza Crust recipe from this site and baked it for 18 minutes at 425 degrees. I chose to put all the cheese on top. We ate this with garlic salt (made the pizza about 10 times better!) but next time I'll sprinkle on the dough. Might even be good with Hot Wing sauce, we'll have to remember to try that next time.

Spinach Chicken Parmesan

This one just didn't do it for me, we all ate it but I won't be making again. The only change I made was to put all the cheese and seasoning in the sauce instead of rolling the chicken in it. Just seemed like and unnessecary step. Also, I've come to the conclusion I dislike oregano except in a red sauce.

Meat Loaf Pie

Yum, I really liked this one but I ate it with ketchup, tasted much better that way. Used frozen corn instead of canned and probably a little more cheese. Served with Buttery Cooked Carrots (recipe from this site.)

Microwave Cracker Pizzas

What a great little snack! I always seem to have leftover pizza sauce and pepperoni and I always have cheese! I used Townhouse crackers instead since that is what I had but to me it resembles more of a "pizza crust" than wheat crackers anyway. I'd like to try baking these under the broiler but they were still good out of the microwave!

Garlic Cheddar Chicken

Mmmmm! My family really like this! It did end up being a tad salty so next time I'll omit the extra salt. (I use salted butter and the cheeses are salty.) I did double the parsley and oregano but next time may swap the oregano for basil. I used chicken tenders istead of breast and kept the baking time the same since a lot of flavor comes from the butter getting brown. Oh, and I used Panko bread crumbs.

Gooey Butter Cookies

This were good but not what I was expecting. I was hoping it would be more gooey but instead they were really cakey. I tried 13, 12 and 11 minutes all ending with the same results: cakey.

Easy Pizza Sauce II

In my opinion all tomato based sauces needs sugar to cut down on the acidity, I added 1 teaspoon of brown sugar. I liked that this wasn't really thick allowing some of the water content to seep into the pizza crust. I chose this recipe for it's small amount called for in the 1-Dish Pepperoni Cheese Pizza Bake from this site but can't wait to try it on a pizza crust I like better, for example, Jay's Signature Pizza Crust.

1-Dish Pepperoni Cheese Pizza Bake

Easy, attractive and tasty. Not restaurant quality but it's still pretty good. I did not have the RapidRise yeast but did have Fleischmann's BreadMachine Yeast which says on the label it's "also ideal for all RapidRise Recipes". Since this was a Fleichmann's recipe I took their own advice. I guess it worked. I didn't have a deep-dish pie plate so I chose to use a 10" springform pan and it worked beautifully. Since you can take the sides off it made cutting it easier. Well (olive) oiled hands made spreading the dough into the well oiled pan a breeze. I chose to mix my dough in a separate bowl. I did find that the crust was a little doughy while the cheese was perfectly brown, next time I'll bake it on the lower middle rack.

Beth's Spicy Oatmeal Raisin Cookies

I always use the recipe on Quaker Oats box and the only difference between the two is this one uses half shortening instead of all butter and it calls for cloves. These will always be my favorite oatmeal raisin cookie.

Italian Vegetable Soup

What a great soup! I did make a couple changes: 1 can of kidney beans, doubled the noodles, fresh green beans, frozen corn, no cabbage and simmered longer (had to add extra water because of that).

Steak Stir-Fry

This was pretty good, I'd make it again simply because it was so fast and easy. I got everything cut/chopped and cooked before the (white) rice was done cooking; that's less than 25 minutes. Next time I'll try it with broccoli instead of the green pepper.

Golden Wedding Punch

Very good punch! I scaled it way down since I only had 2 6 oz. cans of pineapple juice I needed to use up. I didn't use quite all of the water called for since I was serving it over ice and didn't want it to be watery. It'd be interesting to try substituting the water for carbonated water or gingerale.

Lemony Corn Muffins

Ok, it's probably not fair for me to rate these since I omitted the lemon zest, nutmeg and almonds but I really wanted to make basic corn muffins using creamed corn and no mix that didn't make a huge batch for my family of two and a toddler. This was the only recipe I could find. I do suggest maybe adding in 1/4 C of milk since the batter was really thick. Good muffins though!
