Rolled Buttercream Fondant

Easy to work with but not as pretty as you see on professional cakes. I found once I rolled out the fondant and cut out the shapes it was impossible to get off the counter without ruining the shape. I tried again rolling out on waxed paper instead and it worked like a dream. I knew I was going to hate the taste so I just made enough to decorate a buttercream frosted cake (all butter and no shortening). 1* for taste 3* for presentation 5* for ease.

Tater Tot Bake

Not something you'd serve company but great for a weeknight dinner, especially if you have kids. It's almost Hamburger Helper-ish without all the preservatives. I'd make this again.

Grandpa's Popcorn Balls

I made these for favors at a baby shower (along with Gourmet Caramel Apples) so to make them a little more festive I colored the caramel pink with food coloring gel. They were really cute. I don't recommend letting them sit for 5 minutes as I had a hard time getting the last few balls to hold together because it had gotten too cool. Work fast!! I got 12 balls.

German Potato Pancakes

Gourmet Caramel Apples

I've made these twice now. The second time turned out better than the first. Here's what I did. I started with cold apples so it would harden the caramel faster and hold more. Be sure to scrape the caramel off the bottom of the apple before setting it on the waxed paper otherwise there will be a big pool of caramel underneath the apple once it sets. Instead of dipping in the chocolate I drizzled it on with a spoon (omitted the shortening). The first time I made them I dipped them but the chocolate was too warm and it started to make the caramel slide off. It doesn't matter how neat you do it because once you put on the candy coating you won't really be able to see it. I put them back in the fridge to harden then proceeded with the candy coating. I omitted the shortening again but it wouldn't drizzle so I put it in a sandwich bag and cut a small piece off the corner and drizzled it on that way. I bought thick lollipop sticks from Michael's (the small ones are too flimsy) and expandable treat bags. Once I had them all assembled with a tag and curling ribbon they were beautiful. Everyone at the baby shower I brought them too for favors couldn't believe I made them. I was really worried about them melting after being out of the fridge but they survived in a 75 degree house for 4 hours and showed no sign of melting.

Ranch Ham Roll-Ups

I used less green onion (only the green part) then called for and I'm glad I did. It was a pretty strong flavor and almost overwhelmed the rest of the flavors.

Pizza Casserole

Good casserole! I doubled everything except the green pepper and onion and baked it in a 9x13. I mixed in half the cheese instead of putting it all on top.

Runza (meat pies)

I guess I'm the minority here and didn't really care for these but I've never had an official Runza either. I wasn't expecting the outside to be so bread-like. Maybe the next time I go through Nebraska I'll have to stop for one...

Toasted Pumpkin Seeds

I'm really stepping out of the box this week, the second recipe I tried straying from the ones I ALWAYS use. I'm glad I did, these were really good! I did have to bump the heat up to 300 after 45 minutes since they didn't look nearly done and let them go for another 1/2 hour for a total of 75 minutes.

The Best Rolled Sugar Cookies

This is the first time I've made rolled sugar cookies that weren't Mary's Sugar cookies (recipe is posted on this site), those have been a family favorite since before I was born. These were good but not as good as Mary's. A downfall was the dough got really soft after it warmed up which made it kind of hard to work with.

Butter Icing for Cookies

This had a weird "melted butter" taste at first but once it dried it was good. This made more than enough frosting for a 1/2 batch "The Best Rolled Sugar Cookies". It dried pretty fast, a bonus!

Super Duper Oatmeal
