Broccoli with Roasted Red Peppers

I have to say I'm not a broccoli lover but I am learning to like it. I was pleasantly surprised with this recipe and thought it had really good flavor. I chose to use frozen broccoli but nuked in the microwave for a couple minutes. I scaled the recipe way down since it was just me eating it but added everything right down to the fresh parsley.

Famous Pork Chops

This was good but not as good as the Famous Butter Chicken recipe on this site. It is the exact same except for the meat. I did halve the recipe and one egg was more than enough for two chops and maybe would've been enough for four.

Pancakes I

These are great pancakes, I like that it doesn't make a ton of batter since it's currently just me and a 3 y.o. I do have to add a sprinkling of mini-chocolate chips for my pancakes to be complete!

Babe Ruth Bars

I can't say that these taste much like the candy bar but they sure are good! Some reviewers said these ended up hard. I cooked my mixture pretty much just to the point of boiling and boy are they chewy! YUM! I made a sling of sorts out of waxed paper for my pan so I was able to easily remove and cut the bars.

Fresh Orange Juice

Tropicana has nothing on me! I can have fresh orange juice from the tree to the table in under 15 minutes! I've been blessed with the juiciest, sweetest oranges; 3 oranges yield 16 oz. of orange juice.

Strawberry Mallow Dessert

What a great little dessert! It's extremely easy and presents beautifully. I do recommend letting this sit for atleast an hour to let the marshamallows soften. I'm sure I'll be making this one often! I used 1/4 cup of sour cream.

Country Apple Dumplings

Tasty quick little dumplings. I like the convience of the crescent rolls (used the reduced fat). I preferred them without any extra sauce as it was a bit grainy and took away from the flavor of the apple. If I make them again I'll probably halve the sauce part.

Baked Ravioli

5 star rating based on what I did: First, I halved the recipe since it's just me and my 3 year-old. I sauteed the onions in olive oil to soften then proceeded with the rest of the sauce. I did not add the water and only simmered for 30 minutes but let it sit on the stove for 2 hours. Why add water just to simmer it out? I added 1 T of brown sugar to the sauce to cut down on the acidity. I chose to use beef filled ravioli rather then the cheese since it has so much cheese on top. Over all I think this is a great recipe and I loved the chunkiness of the sauce.

Croutons

These are great! I rarely use croutons so it doesn't pay for me to buy a whole box. Now that I know how simple it is I'll always just make them. These did seem a bit salty (I use salted butter) so next time I'll use half garlic powder.

Mini Cheesecakes III

The little cakes seemed to pick up some of the flavor of the muffin tin, I did not use a non-stick, just a regular ol' tin. They didn't want to come out so I ran a knife around the edges to get them out; 5 of 6 survived. Once I placed them on a plate and set them in the fridge they stuck and I had to pry them off. I'll stick to using cupcake liners but I like that the scale of this recipe since it's just me and I can enjoy cheesecake without making a ton.

Butterfinger Cookies

Wow! These are really good! I think I just found my new favorite peanut butter cookie. They are not dry and crumbly like most but kind of crispy-chewy with a nice rich flavor. I used creamy peanut butter instead of chunky since that is what we like.

I wish I could give these 4 1/2. Really good but not the best I've ever had/made. One thing I like about this recipe is you can get away with dirtying only one measuring cup; the 1/2 cup (and one measuring spoon too!)

Chewy Red Raspberry Squares

These are awesome! Don't know if I like these or Delicious Raspberry Oatmeal Cookie Bars better. These have the almond flavoring a 1/2 cup more sugar. I think I remember the others being more crumbly but these ones held together beautifully.

Cranberry Mousse Salad
