Watermelon Cooler Slushy

This had a bit of an ... earthy taste. I love watermelon and lime but, I don't know, this one really didn't do it for me. Sure was pretty though.

Slow-Cooked Steak Fajitas

Since it's just me eating these I had to modify this a bit. I used only 1 lb. steak, half of three colored peppers and instead of the canned tomatoes and jalepeno I just used salsa. I put everything in the slow cooker at once an the peppers and onions were tender and good, not too mushy for me.

Sweet Marie Bars

These were really yummy! I added an extra 1/2 C of cereal, just seemed to be a lot of coating. I also added an extra t. of cocoa powder to the glazed to make it a bit more chocolatey. Only the very top of the glaze hardened and underneath was a bit soft.

Supreme Strawberry Topping

This is 10 times better than just sweetened strawberries on your ice cream. I pureed the whole batch, I prefer to have a smooth sauce.

Old Fashioned Onion Rings

These were absolutely perfect! I chose to use a sweet onion but next time I'll go with the yellow, the sweet didn't pack quite enough onion flavor. Also, for the bread crumbs I used Panko, those breadcrumbs can't be beat when it comes to frying, it's light and crunchy. I like to dip mine in Ranch dressing. Yum!

Candy-Coated Milk Chocolate Pieces Cookies I

For the record I did use all shortening and no butter but did add a bit of butter flavoring. I love the texture shortening gives to cookies. They were best the first day.

Roast Sticky Chicken-Rotisserie Style

Ok, I used a whole bird cut up but the skin was so tough I couldn't even eat it. It really needs to be basted, that's what a rotisserie chicken is: self basting as it rotates. I liked the seasoning and letting it sit over night seemed to allow the flavors to get in the chicken but next time I'll just roast it at a normal temp for a normal time.

To Die For Blueberry Muffins

These were good muffins but lacked the big blueberry flavor because it was taken over by all the streusel topping. To me these resembled more of a coffee cake than a muffin.

Snack S'mores for One

A neat little treat, the crackers were a bit salty for this type of snack though. I did, however, use Townhouse since that is what I had. They were a pain to assemble, everything kept rolling off the crackers so I had to reassemble them in the microwave.

Grilled Peanut Butter and Banana Sandwich

Got milk? You'll need a tall glass while eating this one. One whole banana is too much for my tastes. I used almost half. I also buttered the bread instead of using spray. This is much better than a regular PB and banana sandwich.

Fabulous! Just like potato skins but way easier and not fried! I seasoned both side of the rounds with salt and pepper. I topped these babies with some sour cream.

Black Bottom Cupcakes II

These were good but I felt the cake part was lacking depth and flavor. I may try using part brown sugar next time. I used R.F. cream cheese and it worked great. I ended up with extra cream cheese mixture so be generous when adding the filling.

Crispy and Creamy Doughnuts

I had a difficult time with the glaze. Do not make it until you are ready to use it. I kept having to reheat it and it got hard fast. After reheating it about 5 times it got really grainy. Who would've thought the dough would be easier to work with than the glaze? I didn't have a doughnut cutter (couldn't even find one in the stores) so I used my heart-shaped cookie cutters.

Lemon Raspberry Jumbo Muffins

These were really good muffins. I sprinkled some coarse white sugar on the top before baking to give it a crunch. 1 tsp. of extract can be substituted for 1 tsp. lemon zest.
