Overnight Bubble Bread

I halved the recipe and used an 8x8 pan. I was worried the pudding was going to stay dry but it worked perfectly. I used instant pudding and chopped the nuts. These were truly awesome. Instead of leaving out the recipe for the baking directions in the morning I stuck a post-it note on the Saran Wrap with the time and temp.

Baked Ham Sandwiches

Wow! These were really good and I'm not even a big fan of mustard! My only complaint was 10 minutes was not nearly enough time in the oven, my sandwiches were still cold, however, I do keep my buns in the fridge. I finished them off in the microwave.

Sugar Glazed Walnuts

I scaled this recipe way back since I only needed a small amount to top the Sweet Summer Fruit Bruschetta recipe from this site. My walnuts burnt after 2.5 minutes so make sure you watch them closely. That was all the walnuts I had so I substituted pecans instead and the recipe worked great with about a 2 minute cooking time (about 1/2 C of nuts). They'd be good with some cinnamon added too.

Sweet Summer Fruit Bruschetta

Very good but very sweet! I'll cut back on the sugar next time. I thought the lime juice gave it a great flavor. A very pretty snack/appetizer for a very cheap price. I used the Sugar Glazed Walnut recipe from this site for the nuts but ended up burning all the walnuts I had so I substituted pecans (using same recipe) instead.

Vanilla Glaze

I used this glaze on top of Apple Banana Cupcakes from this site. Obviously the milk amount is a typo. I'm pretty sure the butter should be 1 T as well. I added enough milk to make it to the consistancy that I needed and piped it onto my cupcakes.

Italian Meatball Sandwich Casserole

My husband and I didn't care for this or, should I say, the cream cheese mixture. It was way to rich. It did act nicely as a sealer to keep the bread dry though but I think I might've preferred to have soggy bread without the cream cheese. I saved the meatballs, mozz. cheese and sauce to use with some noodles. Sorry.

Coffee Shortbread

I don't like coffee but I'm starting to sort of like coffee-flavored things. It all started when I accidently bought some coffee flavored ice cream. While these weren't the greatest for me (all though I did eat a couple) they went over really well at my husband's workplace. I even got a thank you "note" (email actually), that's a first!

Nectarine Pie

I placed 5 large nectarines in a pot and filled it with water to ensure the water would cover them when it came time to loosen the skins. It was a lot easier to halve the fruit with the skins on than with out but it was alright since going into this I knew I was going to chop up my fruit instead of leaving it in halves. I used half and half instead of cream and the pie still looked and tasted beautifully. The small amount of almond flavor could really be tasted throughout so if your not much of a fan substitute it for vanilla. Also I think I baked it for about 45 minutes, after the center started to bubble. I had no problems with my pie being runny.

Great dip! My aunt has been making this one for as long as I can remember. I was glad to find the recipe here without having to bother her for it. I omit the green peppers and olives.

Anniversary Chicken I

My husband and I liked this chicken (funny how it looks just like a twiced baked potato!) but I wasn't too crazy about the teriyaki sauce. Next time I'll substitute it for regular barbeque sauce instead. Also, I used real bacon instead of Bacon Bits.

S'mores Bars

Yummy! It probably wasn't a good idea to make a whole pan of this when it's just me and my husband eating it, oh well. At first I only had the large marshmallows and thought I could just cut them up - wrong! They were so sticky I couldn't get them off my fingers! I gave up after 10 minutes which by that time only yielded about 1/4 C and ran to the store with 15 minutes left on the brownies. I used more the the 2 C it recommended and after having the pan back in the oven for about 3 minutes I was getting discouraged that my marshmallows weren't going to brown so I broiled it and it worked perfectly; just watch closely.

Hamburger Steak with Onions and Gravy

Good, cheap, easy and I always have these ingredients on hand. I omitted the Sherry because I couldn't get the bottle open which is probably just as well since it's at least 7 years old. Next time I'll probably add more broth and maybe some milk but it's still great as written.
