Enchiladas

I know I'm going to get in trouble for this but I had to change a lot based on what I had. I still thought they were fabulous, great comfort food! I used 1/2 a yellow onion, omitted the jalepeno, used about 2 T of Taco Seasoning I (from this site), sour cream instead of yogurt. My only complaint is the shells kept splitting and it should state to cover with foil. I'll definitely make this again.

Fun Cookie Suckers

These are so cute! It's like you are really playing with Play Doh. I really recommend using the paste that the recipe calls for so you get the deep color without using a ton of food coloring. After I halved each color I halved them again and pre-rolled the first 6 balls of each color so I could ensure I'd have enough of each color for each cookie. I, at first, tried to the first 12 but they started to dry out. Once I got my rope formed I started forming the inside coil. After three loops I took the tail end of the rope and wrapped it around the coil. I found a bag of 100 6" sticks at Michaels and 100 baggies with ties that fit perfectly on the cookie. They also have a ton of different individual colored pastes to choose from. I will definitely be making these again!

Mom's Best Waffles

I followed the recipe exactly except I used half buttermilk and half 1%. Does buttermilk affect baking powder? Because my waffles were overflowing but not full. I'm a pretty good judge as to how much batter to put in (use Bisquick quite a bit). They were spongy which I liked because they soaked up every bit of syrup. Try them with peanut butter and real maple syrup, yum!

Cheeseburger Pasta

I liked this but oddly my picky 4 year old didn't. I added onion, salt and pepper, and an extra cup of (whole grain) noodles. I didn't have the broth so I used two beef boullion cubes and 2 C water (in addition to the 1 1/2) to compensate for the extra noodles. Very hamburger helperish but that's exactly what I was looking for. I wonder if a can of diced tomatoes would've been better than the ketchup...

Vanilla Ice Cream I

I did not beat the cream, I've heard if you beat the cream too much in ice cream it could actually turn into butter. Also, I used just the yolk. I added Oreo's after processing the ice cream.

Creole Seasoning Mix

This recipe is almost identical to Emeril's Creole Seasoning (minus 1 T of salt) and his specialty is Cajun and Creole so this has to be the best, right? The recipe I use this most in is Cajun Chicken Pasta from this site.

Strawberry/Rhubarb Crumb Pie

I missed the part where you have to bake it for 10 minutes at 400. I guess that would explain my under cooked crust and slightly crunchy rhubarb and runny sauce. I still had it in for 45 minutes but at 350. I'd give this another try; the flavor was good.

Deli-Style Pasta Salad

I love this pasta salad, it's so versatile. You can use any veggies you like or pasta for that matter. Sometimes I will add diced salami and cheese, just ask for an extra thick cut at the deli.

Fudge Puddles

Great cookies! My pan is a dark non-stick so I reduced heat to 325. I used a rounded measuring spoon to make the well then twisted the cookie before I removed them from the pan and didn't have any casualties. There was a lot of fudge left over but it can be mounded pretty high, it immediately holds it's form. I did have to reheat as it cools quickly plus the sprinkles I added in lieu of the pecans had to be added after ever few cookies to ensure they'd stick.

Strawberry Cake and Frosting I

These are fabulous! I wasn't so sure at first as the frosting seemed kind of pasty but they were much better the second day. I wasn't quite sure of the kind of strawberry the recipe called for so I used sweetened, sliced strawberries, thawed, then pureed them in the food processor. WAY better than box strawberry cake and frosting!

Homemade Chewy Granola Bars

Pumpkin Oatmeal

I give this one a four with my additions: a lot of brown sugar, salt to taste and raisins. Also, I used old-fashioned instead of quick; a texture thing.
