Fudge Puddles

Great cookies! My pan is a dark non-stick so I reduced heat to 325. I used a rounded measuring spoon to make the well then twisted the cookie before I removed them from the pan and didn't have any casualties. There was a lot of fudge left over but it can be mounded pretty high, it immediately holds it's form. I did have to reheat as it cools quickly plus the sprinkles I added in lieu of the pecans had to be added after ever few cookies to ensure they'd stick.

Strawberry Cake and Frosting I

These are fabulous! I wasn't so sure at first as the frosting seemed kind of pasty but they were much better the second day. I wasn't quite sure of the kind of strawberry the recipe called for so I used sweetened, sliced strawberries, thawed, then pureed them in the food processor. WAY better than box strawberry cake and frosting!

Banana Oat Muffins

Coconut Cream Pound Cake

A very yummy and flavorful cake. It's easy to eat more than you should. Weird but the top half was a lot better then the bottom half, maybe due to oven postioning?

Homemade Chewy Granola Bars

Slow-Cooked Steak Fajitas

Since it's just me eating these I had to modify this a bit. I used only 1 lb. steak, half of three colored peppers and instead of the canned tomatoes and jalepeno I just used salsa. I put everything in the slow cooker at once an the peppers and onions were tender and good, not too mushy for me.

Sweet Marie Bars

These were really yummy! I added an extra 1/2 C of cereal, just seemed to be a lot of coating. I also added an extra t. of cocoa powder to the glazed to make it a bit more chocolatey. Only the very top of the glaze hardened and underneath was a bit soft.

Old Fashioned Onion Rings

These were absolutely perfect! I chose to use a sweet onion but next time I'll go with the yellow, the sweet didn't pack quite enough onion flavor. Also, for the bread crumbs I used Panko, those breadcrumbs can't be beat when it comes to frying, it's light and crunchy. I like to dip mine in Ranch dressing. Yum!

Candy-Coated Milk Chocolate Pieces Cookies I

For the record I did use all shortening and no butter but did add a bit of butter flavoring. I love the texture shortening gives to cookies. They were best the first day.

To Die For Blueberry Muffins

Grilled Peanut Butter and Banana Sandwich

Got milk? You'll need a tall glass while eating this one. One whole banana is too much for my tastes. I used almost half. I also buttered the bread instead of using spray. This is much better than a regular PB and banana sandwich.

Roast Sticky Chicken-Rotisserie Style

Ok, I used a whole bird cut up but the skin was so tough I couldn't even eat it. It really needs to be basted, that's what a rotisserie chicken is: self basting as it rotates. I liked the seasoning and letting it sit over night seemed to allow the flavors to get in the chicken but next time I'll just roast it at a normal temp for a normal time.
