Everyone in my family has a "specialty", my brother is the best breakfast maker, Mom's the weeknight cook, Dad's the weekend cook with the gourmet meals and I'm the baker! Food is a great way for my family to spend time together. Since we now live spread across the US, our time together is mostly spent in the kitchen.
My cooking triumphs
I am the official cake baker for co-worker birthdays!...They used to get store bought cakes before I got here :-(...everyone deserved a homemade cake on their birthday!

Pineapple Upside-Down Cake V
I LOVE this recipe! I use all recipes as guidelines, here's how I changed this one up. I make one larger round cake, I have a great round cake pan that fits all of the batter into it. I add the crushed pineapple to the batter when making the cake mix. When I have everything added and mixed, minus the water/pineapple juice, I add enough pineapple juice to make it the right consistency. I then bake it for 50/60 minutes. My co-workers request this cake all the time! The rings/cherries on top make this cake look so professional, and it's so easy! I also have found pineapple cake mix in the store to make this cake especially pineapple-y!

Crab Dip
LOVE THIS!!! So easy and delish! I added in some artichokes too, which worked out great. Either way this dip is a winner! Everyone I serve it to RAVES how good this is. I'm ashamed to admit how easy it is! I don't always use a bread bowl, sometimes I just bake it up in a pyrex dish and it works perfect with pita chips!

Creamy Rice Pudding
I didn't use as much milk as was called for, I ran out!, but it turned out GREAT! I also didn't use all the sugar called for. I did add in some freshly grated nutmeg at the end, which gave it a nice flavor. I used leftover white rice from Chinese the night before :-)
