Sesame Pasta Chicken Salad

This is terrific. I subbed canola oil for the vegetable oil and omitted the cilantro. I did add some finely chopped red bell pepper. It was excellent and will definitely become a staple.

Broccoli and Tortellini Salad

Eek. Not good. I have had this without the tortelli and with coleslaw dressing and it was good. This, however...not good. The dressing was much too sweet, and the tortelli added a weird flavor. I'll go back to the old recipe.

Baked Teriyaki Chicken

This chicken was very good. I cut the recipe in half and substituted white wine vinegar for the apple cider vinegar. Excellent and easy!

Baked Ziti I

This ziti was dissapointing to me. I omitted the meat, but otherwise followed the recipe exactly. I was leery about the sour cream, but added it anyway...and I wish I hadn't. It didn't really "mix" and separated instead. The result was not very appealing visually, and you could definitely taste it. I would recommend omitting the sour cream or at least using less. Also, I would add the mozzarella to the top to get a nice brown cheese. Will not make again.

Potato Leek Soup III

This was very good. I agree with the previous reviewers that this in no way needs all the fat that is included in the original recipe. I used 2 tbsp of butter and 2% milk instead of cream. I also used 4 leeks and new potatoes instead of Yukons. I used my immersion blender after it was done cooking to smoothen it up some but still left some potato chunks. Really delicious.

Spinach and Sweet Corn Mashed Potatoes

Pretty good. I did not follow the directions on the mashed potatoes, and instead made them the way I make all my mashed potatoes-with 2 tbsp butter, 1/4 cup 2% milk, salt, pepper, and rosemary. The spinach and corn were definitely a nice change from the ordinary. Very easy to make and tasty.

Easy Slow Cooker French Dip

Excellent. I used Bass beer and seasoned the meat a little beforehand with sea salt, pepper, and garlic. Delicious and very easy. I also recommend making the sandwich open-face and adding some cheese and then heating the whole thing up in the oven.

Chicken Pot Pie IX

Pretty good basic reipe. I omitted the celery because I am not a fan and used biscuits instead of pie crust. Tasted good, but it did seem like something was "missing." I will make again and experiment with ingredients.

Exquisite Pizza Sauce

This pizza sauce was excellent. I added everything except the anchovy paste as I didn't have it. I also eyeballed all the ingredients instead of measuring, and it still came out perfectly. Very easy and good.

Burrito Pie

I made a smaller version of this by using 1 lb of ground turkey and only 1 can of refried beans. I also put it in 2 regular Pyrex pie pans and froze one for later. This was really good--does indeed taste just like a burrito.

Chicken Garlic Pizza

This was really easy and good. I skipped the cilantro and used a regular onion instead of green. My pizza dough was store bought and turned out to be much too thick and doughy with a sour taste, so I would suggest a nice thin dough instead.

Spinach Quiche

First off, this is a first rate quiche. Really delicious. However, I made a couple of changes. You absolutely do not need that much butter. I used 2 tablespoons and it was perfect. I also omitted the mushrooms added a half package of bacon, and used plain feta. Really rich, but really good. It was even better the next day cold for breakfast. A++

Marie's Easy Slow Cooker Pot Roast

This came out very well. I followed the recipe pretty well, except I omitted the celery and added a splash of Worcestshire sauce and some peas in the last hour of cooking. I cooked it on low for about 7 hours, then cranked up to high for the last hour. I also added about TB of flour to thicken up the gravy.

Chicken Enchiladas I

These were good. I halved the recipe, used enchilada sauce (canned) instead of taco sauce, and used an orange bell pepper instead of green. If I make them again, I will not used canned tomato sauce. It gave the enchiladas a weird taste--kind of like canned ravioli. This is not the fault of the recipe, of course, just a personal preference. Overall tasty, easy, and good.

Maria's Stuffed Chicken Breasts

I cut this recipe in half. Even so, there was almost twice as much filling as I needed, so I just put it in the baking dish on the side. Covered with pasta sauce, it all mixed together and tasted the same anyway. This was good, but somehow not as good as I had hoped. My husband really enjoyed it though, so we will definitely be having it again.

Coconut (Haupia) and Chocolate Pie

This pie is amazing. I used an oreo crust, and didn't bother with making whipped cream. I just used Reddi Whip and added it right before eating. I also added a tsp of coconut extract and a small handfull of coconut flakes to the plain coconut pudding. It was pretty easy to make, and very good.

Roasted Vegetables

I made this as kind of a clean-up-the pantry dish, so used what I had on hand. I didn't have butternut squash, but had 2 sweet potatoes, and added zucchini as well. I also used balsamic vinegar salad dressing instead of plain vinegar, as that is what I had on hand. I turned out quite well, with the vinegar giving it a bit of extra flavor. I will make it again.
