I was a stay at home Mom of 2, now working as a dietary manager at a childcare center and going back to college. I recently lost 65 pounds and have really changed my eating habits. No more baking for me except for church!

Easy Mint Chocolate Chip Ice Cream
This was declicious! This is the first recipe I have made with my new KitchenAid ice cream maker, and it was so easy. No cooking-just mix and pour. My whole family loves chip and mint and this is wonderful. I prefer a lower fat version so I will be tweeking this recipe in the future. Will give updates.

Linda's Monster Cookies
I really liked these cookies. I went with some suggestions and substituted the margarine with peanut butter, otherwise I left the recipe the same. It gave it a hint of PB without being overpowering. My family gobbled them up! Cookies like these are why I don't bake anymore unless I'm baking for church or something. I couldn't stop at just one!!

Disappearing Fruit Dip
I really loved this recipe. I added more lime to my liking. I also gave it a few drops of green food coloring- I had a fruit dip assortment and wanted to tell them apart. I tried to use a real lime, but it would not juice, it was so hard. I rolled it, I heated eat, and nothing. The juice buds would not break. So I used bottled lime juice instead. Worked great. Will make this again.
