About this Cook
I am a busy mom of three beautiful children, ages 7, 3 and 19 mos., and another on the way! I love to cook for my family and love for the kids to be involved in food preparation so they can learn about healthy ways to cook and the importance of nutrition.
My favorite things to cook
I love to cook everything from rich French dishes to Thai dishes, Italian, Mexican and Down home American food. I try to keep my ingredients light and use healthy oils and plenty of vegetables. In order to make sure that we get plenty of veggies with our meals, I usually start with the vegetable dish and build my meals around those.
My favorite family cooking traditions
My Mother is Swedish, and so I grew up making delicious Swedish pancakes on Sundays, and Swedish meatballs with lingonberries dinners. In my family, cooking is a social event any everyone enjoys helping.
My cooking triumphs
A delicious Red-pepper cream sauce with chicken and asparagus in a puff-pastry that is to DIE for. I was intimidated on the first try, but it is one of my favorites and I reserve it for special occasions it's so good!
My cooking tragedies
Not too many, but you do not want to see my kitchen after one of my attempts at omelette making! Luck for me my husband once worked as a short-order cook and he makes better omelettes than any restaurant!

Crisp Oatmeal Cookies
These were freakin' fantastic. Since everyone else wanted to be different, I just followed the recipe. (Well, I left out the chocolate chips because I didn't have any.) This will be my new oatmeal cookie recipe.

Chicken Breasts in Caper Cream Sauce
Very, very good! Super easy and quick to make, the sauce turned out rich with wonderful flavor and thr chicken was tender and delicious. One of my boyfriend's friends was here for dinner, and he liked it so much he had to ask me how to make it! :) I will definately be making this again.

Dijon-Tarragon Cream Chicken
Well, I wouldn't go so far as to say that "you'll think a french chef came to your house" but it is a good quick substitute for an hour's work for a real french recipe. My 7 year old wasn't thrilled, but I definately enjoyed it enough to make again. Maybe she'll come around!
