Eggplant Parmesan II
This was the first time I've ever made eggplant parm. I was nervous that no one would like it. WRONG! Everyone gobbled it up and they told me to make it again. :)

Corn and Black Bean Salad
I loved this! The longer it sat in the fridge, the better it got. I added some hot sauce to it and thought it was a great addition. Excellent salad!

Nacho Chicken Casserole
This was wonderful! My kids ate it and I took it for lunch the next day--people at work begged for the recipe. YUM! (I did leave out the mushrooms because I didn't have any on hand).
