Pizza Crust for the Bread Machine II

Delicious pizza crust! I didn't use lemon juice and used olive oil. Used about 3/4 tsp of salt instead of the 1/2 tsp called for. I made one good size pizza with the dough, on my pizza stone. Excellent when grilled over an open flame on the bbq. It only took about 12 minutes to fully cook.

Pseudo Sourdough for the Bread Machine

This is no real sourdough but it sure is tasty. I just pulled mine out of the machine a few minutes ago and tried it. I'd compare it to a crusty French bread. Delicious and probably will make great toast in the morning with pb & jam on top. I left my sour cream out on the counter for 30 minutes before putting it in the machine. Not room temp, but not fridge cold either. Will make again for sure but I will also keep looking for that perfect sourdough recipe for the bread machine.

Best Spanish Rice

Delicious and authentic! I added about 3 TBSP chopped green bell pepper with the onion, sauteed it together in the oil, added the rice (jasmine) and sauteed for about 3-4 minutes before added 2 minced cloves of garlic, sauteed another 1-2 minutes then added the broth and salsa. Excellent texture. This will be made again! Really good with Mexican Chicken I from this site.

Garlic Mashed Red Potatoes

Absolutely delicious! I decided to try something new this year for the potatoes on Thanksgiving and this was it! Love how the garlic flavor is infused in every bite. I used whole milk instead of fat free (was all I had) and omitted the cheese. Left a bit of the potato skin on as well, I just like my mashed tater that way! Yummy!

Crunchy Green Bean Casserole

This came out just like my Mom's used to be, when I was growing up. She always used water chestnuts and bacon and that's what makes this casserole stand out! It was just perfect on Thanksgiving with a turkey breast made in the crock pot, cornbread stuffing and garlic mashed potatoes. What a great recipe!

Libby's® Famous Pumpkin Pie

Absolutely perfect pumpkin pie! I made this the day before Thanksgiving, I used a homemade crust, and it makes all the difference in the world. Don't change a thing on this recipe, it is a great one as is! Yummy pie for Thanksgiving, with a bit of cool whip on top.

Slow Cooker Turkey Breast

I was skeptical at first, about this recipe. Don't be like me, TRY it. You won't be disappointed! I used a 5 1/4 lb. bone in turkey breast. Rubbed the onion soup mix under the skin and on top of the skin. Poured about 1/2 cup of chicken broth in the bottom of the crock pot so things stayed moist in there. Let this baby cook for 8 hours just like the recipe states. The meat comes apart from the bones when you remove it from the crock pot! It is that tender and juicy. Excellent flavor. I will definitely be using this recipe from now on for Thanksgiving. SO easy and such little clean up and hassle, there's no basting involved, you just put it in the pot and forget about it! Genius!

Coconut Pumpkin Nut Bread

I made this tonight and I like it alright, but have a few comments. The only change I made to this was using sweetened coconut. I LOVE coconut so I was expecting something 'great' from this recipe. I admit I was skeptical when I added the coconut, 2/3 cup doesn't seem like enough for two loaves. It is good bread, don't get me wrong, but it's not the 'best' pumpkin bread I ever tried. This was also my first time using coconut milk. If you really want a GREAT pumpkin bread recipe I'd recommend Downeast Maine Pumpkin Bread from this site. Now THAT is some good stuff!

Pizza On The Grill II

I have made this pizza five times now, on my pizza stone on the grill. I make sure the grill is heated to 375 degrees then cook for 15 minutes. I use a pound of fresh pizza dough from the deli at WalMart (only 88 cents) and it works beautifully!

Coconut Raspberry Bars

These were a HIT at the office today! The entire pan is gone. My husband loved these too. I followed the recipe as is except used double the vanilla. Absolutely delicious and awesome flavor combo! Try it!

Slow Cooker Chicken Taco Soup

I thought this turned out to be more like a stew than a soup, but it was still delicious topped with homemade salsa and scooped up with scoops tortilla chips. I only used 2 chicken breasts and I also used a 2 tbsp. of a homemade taco seasoning from this site, Taco Seasoning I. Delicious the next day, too, warmed up for lunch!

Banana Cream Pie I

I made this recipe as is, using my mother in law's pie crust recipe. It was my first time making pie crust from scratch, and my first time making banana cream pie. It came out beautifully, and it tasted just right. I baked this for about 13 minutes, and topped it with fresh whipped cream with a touch of vanilla. Excellent!!!

Apple Crisp II

I cut this recipe in half, used 4 Granny Smith apples in an 8x8 glass pan. I also used the normal amount of topping that you would use if you were making the whole recipe. This was AMAZING!!! I highly recommend it as a delicious fall treat.

Taco Seasoning I

This was AWESOME. I absolutely loved it so much better than the packaged stuff. I will add a little more red pepper flakes next time, as I prefer my tacos a little spicy. I will definitely be using this instead of the packets from now on. Cheaper, better for you and tastier, what else could you ask for?

Roasted Potatoes with Tomatoes, Basil, and Garlic

This was delicious! I used 1 1/2 pounds of tiny miniature yellow potatoes from Trader Joe's and a pint of grape tomatoes, cut in half. I also added the fresh basil only for the last 10 minutes of cooking because I didn't want it to burn. Delicious paired with grilled chicken breast. I will be making this again for sure!

Cherry Almond Pound Cake

Lemon Pie II

This was amazingly easy to make! The only thing I did differently was add a tsp. of lemon zest. This really could have used a bit more lemon tang, for my tastes, but was still creamy and delicious. I will be making this again, next time I will add 1/4 tsp. of lemon extract, to boost the lemon flavor.
