About this Cook
In spite of my busy life, cooking is a priority. I enjoy putting a satisfying meal on the table after a long day of work. My husband and I enjoy our time togehter over dinner. I also see my cooking and baking as a way that I can bring joy to others, and by doing so, I aim to share the love the Christ by doing something that I can do well and that others appreciate.
My favorite things to cook
Something new! I love to try new things. I have pages and pages of recipes that I have loved, but rarely repeat them because it's so fun to try something new. I love to find recipes that are healthy and still delicious. I also am always trying new ingredients, especially different fruits, vegetables, and grains.
My favorite family cooking traditions
I grew up in a family that loves to bake ... cookies, cakes, pasteries, bread, doughnuts, etc. I still LOVE to bake but have had to cut back because if I make it, I will eat it! Now I try to bake so that I can share with others.

Thai Pumpkin Soup
This has a very nice flavor... not over the top, but a nice thai flavor. I used one dried chili pepper in place of the fresh and it had a nice warmth to it. I also used butternut squash in place of pumpkin. Please note that this makes a fairly thin soup; if you were looking for a bisque consistency you may want to decrease the amount of broth. Enjoy!

Cinnamon Bread Delight
This is wonderful. It seems simple enough, and it is, but it comes together very nicely. Not too high in fat, either. I have to recommend a streusel topping to really kick it up to ultimate: mix oatmeal, flour, sugar, butter and sprinkle on top.

Mediterranean Potato Salad
This was very good, but I made some significant changes. I cannot believe that you would really want to use this amount of feta; it must completely overwhelm the other ingredients. I used about 2 ounces of feta with the other proportions being the same. The other changes I made were as follows: used light italian dressing, added fresh parsley, and dried oregano.
