Cranberry Crumble Coffee Cake

Yum! I only made two small adjustments; I used the full can of cranberry sauce, and I used reduced fat sour cream because it's all I had. It still came out moist and delicious. The batter was really thick, and spreading it over the cranberry filling was a bit tricky. I recommend keeping the cranberry filling away from the edges when spreading it on, because I will all get pushed out from the center as you're putting on the top layer of batter. This will become my regular coffee cake. Made it the night before and it was great in the morning.

Pumpkin Roll Cake

I didn't add the walnuts, but otherwise made as directed. I thought it was OK, but the cake was sort of bland. My guests really liked it, though, so I'm giving it 4 stars. If I make this again, I'll figure out a way to make the cake taste more "pumpkiny". Maybe I just need to increase the cinnamon, nutmeg, and cloves? Presentation was very nice. Filling was tasty.

Pecan Pie Bars I

Excellent. I brought these to a potluck and they were the first thing to go. I adjusted the recipe to 24 servings and made it in a 9x13 pan. (All the adjustments worked out evenly, except for the egg. I used three full eggs.) Even with the smaller pan, I ended up baking the crust for 20 minutes and the filling for 30. It didn't seem quite set at 25 minutes. Delicious!

Apple Pie by Grandma Ople

Delicious. Best apple pie I've ever had. Pouring the sauce on top of the crust made it taste SO good, and was far easier than trying to brush it over the top since it hardened so fast. It did mess up the appearance of the crust, though. I made a really pretty crust but it became completely misshapen by pouring the hot sauce on it. Worth it, though!

Overnight Cinnamon Rolls I

Very good. The only change I made was using the cream cheese icing from the Clone of a Cinnabon recipe. My only word of caution is to make sure that these are really well covered in the fridge overnight. I didn't make sure to have a tight seal on my pan, and the rolls got pretty dry overnight. I think this definitely inhibited the rising process.

Delicious Ham and Potato Soup

Only changes were that I added garlic and used only 4 T butter. It was OK, but fairly bland. It's just a basic cream soup. If I make it again, I'll double the celery, onion, and ham, because I thought there was too much "broth". I just felt like it was missing something. Herbs? More veggies? Needs to be doctored up.

Pumpkin Spice Cookie

The taste was OK, although they could have used a lot more spice. The texture, however, was pretty terrible. They were OK fresh out of the oven and had a nice crusty muffin-like top, but after just a few hours they were wet and spongy. And I even cooked them for 15 minutes. Maybe adding texture with chocolate chips or nuts makes all the difference, but as-is they are just mushy.

Smokin' Scovilles Turkey Chili

Didn't have a particularly unique flavor, but a very good standard chili recipe. I used half the amount of turkey and double the beans. Didn't add the habenero and still thought it was spicy enough from the pepper flakes. Ended up adding a lot of extra salt and a big splash of red wine vinegar to bring out the final flavor a bit more.

Roasted Brussels Sprouts

Very tasty. I cut some of them in half and left others whole to compare the two, and I can't decide what I like best. I did add garlic and wish I hadn't used quite so much (two cloves). I tried drizzling with a little balsamic after cooking, and think that next time I'll add it before roasting. It would probably caramelize beautifully.

Curried Squash Soup

Good, but not great. I appreciate the fact that this low-fat, but I really prefer a creamier squash soup with more traditional seasonings like nutmeg. I really thought the curry overpowered the squash. Probably won't make again.

Carrie's Garlic Pesto Tuna Salad Sandwiches

I wasn't sure if I'd like the combo of pesto and tuna, but it actually works well. The amount of pesto is fairly light and subtle. I added celery for crunch and roasted red pepper.

Luscious Lima Bean Soup II

I love lima beans, but think this is pretty bland. I went much heavier on the salt and added garlic, but it still just tastes like a pot of beans. I'm also not crazy about how thin the broth is. I prefer a thicker soup.

Grilled Eggplant, Tomato and Goat Cheese

Good, but needs tweaking. They had sort of a tangy metallic taste. I like the idea of making the grilled eggplant sandwiches, but might season the eggplant with dried Italian seasonings and olive oil instead of the vinegar next time. Fresh basil added a lot of flavor.

Ham and Pineapple Couscous Salad

This was an easy, tasty meal. I substituted lima beans for the peas, used much less onion, used a large can of pineapple, and added fresh basil. The leftovers were fairly dry since the couscous absorbs so much liquid, so I will likely increase the dressing when I make this again.

Black Bean Pasta

OK, but fairly bland. I ended up going much heavier on the seasonings and also added salt and fresh cilantro. Since others complained about this being dry, I used one can of tomato sauce and one can of garlic/onion diced tomatoes, which I thought worked well. I'll likely make this again, with modifications, just because I always have this stuff in my pantry!

Summer Salad with Cumin-Crusted Salmon

Loved it. This was a light and delicious summer salad. I adjusted the dressing because I had no orange concentrate and wanted to cut down on oil. I used 4 T. of fresh orange juice, about 1 T. of orange zest, and only 2 T. of oil, and also added a dash of cayenne pepper. Only other adjustment was adding an avocado, which I highly recommend. Delicious!

Lasagna Spinach Roll-Ups

Although this wasn't knock-your-socks off delicious, it was good and fairly healthy for an Italian dish. I had to add a lot of seasoning (garlic, Italian seasoning, salt, etc.) throughout the process. Otherwise would have been very bland. I also added zucchini to the filling. If I make this again, I'll probably add even more veggies to make this more filling.

Mayonnaise Biscuits

These are bland. Fresh out of the oven, they just tasted like flour. After storing them in a ziplock bag overnight, they now taste like plastic. They're so bland that they absorbed the flavor of the bag! I will say, however, that the texture was nice. Because of the ease of preparation, I would make these again if I were serving them with a flavorful gravy or something. But they're not worth eating alone.
