Citrus Garlic Shrimp

We liked the tangy citrusy taste - it was different than other shrimp dishes we're used to - but felt as though the dish was missing something to make it complete. Next time, I may add in asparagus, as someone else recommended. I left out the zest, and it was a good acidity. Used about 12 oz. of linguine, and added in the cornstarch as recommended by the top reviewer. Will make again. Thanks!

Blackened Shrimp Stroganoff

This was a hit with my family, including my picky 2-yr-old daughter. I used regular onions rather than shallots, and didn't have roasted red peppers. I also used Creole seasoning instead of cajun. I love that this is a lower-fat version of similar dishes - thanks!

Chocolate Chip Muffins

These were very good, but there's room for improvement. I added in the full cup of milk as recommended, but I think I'll add in more next time, or try the sour cream trick. I intended to add vanilla, but forgot to do so - I think that definitely would have added that extra something. I'm not sure how anyone was getting more than 12 cupcakes - my batter barely filled up 12!

Overnight Blueberry French Toast

My family loved this, although I messed up the sequence and baked it uncovered first! Either way, I don't think the bread will get mushy in this. I used challah bread, 3/4 cup sugar instead of the whole cup, and 1 1/2 cups blueberries in the layering. I also spread out the cream cheese after mixing it with some milk - I think I'll add powdered sugar to the cream cheese next time. I also used 1 1/2 cups of blueberries for the sauce, and 10 eggs instead of 12 (which I think would have been a bit much). Thanks!

Baked Omelet Squares

Delicious, thanks! I omitted the olives, ham, and jalapenos, and scaled the recipe down to 8 eggs. Sauteed green onions and fresh mushrooms with the onion ahead of time. Had to use Mexican cheese blend since I didn't have Cheddar. It was a huge hit with my family - I'll be making the full recipe size next time! Will also add in diced tomatoes, which I think would be a great addition.

Mexican Corn

This is very good - I used 11 jalapenos, but will probably tone it down next time to about 7-8. I also forgot the garlic salt but it was still good. I might add Rotel tomatoes next time around. Thanks!

Jalapeno Popper Spread

This was a good, easy dip - very similar to others I've had/made, but with a kick. I used a 4 oz. can, and the 1/2 c panko/1 c. mozzarella mixture. It was spicy but not too spicy. I did have quite a bit leftover though, and no one in the house wanted to finish it since it's so fattening!

Baked Ziti Casserole

This was a good basic recipe - I needed a meatless main dish since we were having vegetarian guests, so I made this pretty much as is. The only difference was to use 2 jars of sauce instead of one, which is a must - it would have been way too dry otherwise. Thanks! ***UPDATE***I made this again the following week, and added a liberal amount of Italian seasoning and garlic powder to the ricotta mixture. It was much better! Otherwise, the ziti has a blandness problem.

This is definitely a delicious cookie - I made a batch for a bake sale, and used the 1/2 brown sugar, 1/2 white sugar suggestion. I would never make these for my own house due to the ridiculous amount of butter, though! I may try a modified version.

This really didn't do much for me. I made it for a bake sale, and followed the recipe exactly. I had one bar for myself, 1 for my husband - he liked his quite a bit, but I thought it was waaay too sweet. I won't be making these again.

Roasted Chicken with Risotto and Caramelized Onions

This was a good, easy recipe, although it definitely took longer than 20 minutes, but overall I had it ready less than an hour after I started cooking (I used a store-bought rotisserie chicken.) I definitely recommend using 2 onions, and adding mushrooms - I added 8 oz. of baby bellas, and reducing the balsamic vinegar. I used 1 T, I think 2 T would have worked better. I also used white grape juice instead of wine, since we are a no-alcohol family, and probably only about 6 cups of chicken broth. I think sundried tomatoes, or a good tangy salad, would have worked well with this. Thanks!

Mushroom Risotto

I'm giving it 4 stars b/c my family loved it - it was more of a 3 star dish for me. I left out the celery and substituted chicken broth for vegetable, but otherwise followed the recipe, and it was just very watery although I let the liquid absorb for a very long time! It was also a little too rich for my taste.
