Chile Relleno Casserole

Thank you much for this recipe! I needed something with simple ingredients that I had on-hand. I actually used this with leftover chicken instead of beef. I wanted to be quick so I added 1 cup of salsa on top of the meat instead of onion. I used Chedder/Jack combo cheese. In addition to salt and pepper, I added 1 tsp. of sugar and 1/2 tsp. of cumin to the flour/egg mixture. I used diced green chiles and only used one 4 oz. can. I didn't want to use 2 in case I didn't like the recipe since I made so many changes. Well, it came out super tasty and I will make it again. There was a lot of juice from the salsa so I served with a slotted spoon.

I agree with the 5 stars. This is an excellent, sweet, moist pumpkin bread. I used 2 cups of my own pumpkin puree and followed the recipe exactly.

Wild Rice Turkey Dish

This is a good, simple casserole that would be a great way to use turkey leftovers. If you don't have/like canned soup, make your own white sauce or use some leftover gravy. I used bread heels and tossed them with a half tsp. of poultry seasoning. I had leftover basmati rice from Trader Joes that I had cooked in broth. I cooked the wild rice separately and mixed them together. I used leftover chicken thighs this time, but will try with leftover turkey after Thanksgiving.

Easy Chicken Enchiladas

I made my own "cream of chicken" soup. and topped the whole shabang with some leftover mango salsa. I might have used less cheese-didn't really measure. Mild enough for the kids. My husband and I added diced jalapenos to ours once on the plate. Yum!

Great easy recipe. Exactly the taste I was looking for. I used the author's suggestion of half chicken stock, half cream. I thickened it with a bit of flour. My toddler LOVED it and my husband had seconds.

Jacky's Fruit and Yogurt Muffins

This recipe inspired creativity and I made them 100% organic whole grain. These are going to be a breakfast staple at our house! I used 1c ww pasty flour, 1c old fashioned oats. You can use any flavor yogurt with any kind of dried or fresh fruit. I used a 6 oz. yogurt and so I added a few tbl. milk. I used canola oid instead of butter for lower cholesterol. I halved the sugar (i used brown) and it was still too sweet for me maybe because of the kind of yogurt I used or because I put in date crumbles which are very sweet? Next time I will only use 1/4 cup of sugar. My toddler LOVED these.

Oh wow-my fav sushi restaurant has a baked fish dish that tastes a lot like this. I'm so happy to be able to make it at home since I have a toddler and can't go out much. And it's so easy! Thank you!!!!

No Bake Cookies I

I've made these several times and they are so delicious. I've never had a problem with the recipe. Just have the oats, peanut butter & vanilla ready to go so you don't have to take the time to measure. Then, make the cookies right away.

Amy's Barbecue Chicken Salad

I don't understand the picture of this one, but the salad is delicious. I marinated boneless chicken tenders in bbq sauce, garlic & green onion before grilling. I wll go 2 parts ranch to 1 part bbq for the dressing next time. My husband LOVED it and asked to add it to the rotation.

Lemony Steamed Fish

I used orange roughy it was so delicious! It had a wonderful flavor even without any oil or butter. I use all purpose Greek Seasoning as my season salt. I used fresh crushed garlic instead of powder and didn't have onion powder so I omitted. It is great to have recipes like this for a husband watching his cholesterol! Thank you.
