Easy Chicken Enchiladas
I made my own "cream of chicken" soup. and topped the whole shabang with some leftover mango salsa. I might have used less cheese-didn't really measure. Mild enough for the kids. My husband and I added diced jalapenos to ours once on the plate. Yum!

Megan's Granola
Delicious! Perfect proportions (with author's correction) I used flax seed meal instead of oat bran. Slivered almonds are great in it. Thanks.

Easy Sausage Strata
I followed the recipe exactly and it was delicious. I used Trader Joes white-wheat bread and baked uncovered. Thank you!
