Fiery Fish Tacos with Crunchy Corn Salsa
Overall, I thought these were very good. I omitted the jicama because I couldn't find it and I still thought the corn salsa tasted great. I halved the cayenne pepper because of other reviews, and added a little bit of old bay. I thought it was a bit too spicy still, but my boyfriend thought it was perfect. Will be making these again!

Whole Wheat, Oatmeal, and Banana Pancakes
I thought these were awesome! I made a half-recipe since I was just cooking for my boyfriend and myself and it yielded 8 pancakes, 1/4 cup of batter each. To make them more healthy I used (for 3 servings) one egg white instead of the egg, 1.5 Tbsp applesauce instead of the oil, and skim milk. As others mentioned I added cinnamon and used a very ripe banana for mashing. With my substitutions the caloric content is about 195 calories per pancake and only 1g of fat, not bad! Thanks for the great recipe! I will be making these again!

Whole Grain Waffles
I love these waffles! Like others I omitted the oil and increased the applesauce to 1/2 cup, used egg substitute in place of the eggs and added 1 tsp. cinnamon. I have also tried this recipe with 1/2 cup canned pumpkin instead of applesauce and 1/2 mashed bananas instead of the applesauce. The pumpkin waffles were good, but you couldn't taste the pumpkin as much as I would have liked. The banana waffles, however, were amazing! They had a great texture and wonderful banana flavor! My only suggestion for making these waffles without any oil is to make sure your waffle iron is non-stick or greased with a little cooking spray or they will stick. Thanks for the recipe! It is definitely a keeper in my house!!
