Broiled Halibut with Goat Cheese Crust
YUM!! Absolutely delicious. My husband made this, and I forgot I was at home and not at a favorite restaurant. Next time, we'll add some almonds to the top just for a little texture. Other than that, won't change a thing.

Chicken Enchiladas III
My husband made these, and we all enjoyed them. Not traditional enchiladas, but yummy in a kid-friendly sort of way. We added some chopped jalapenos for some kick. I certainly wouldn't make these for a dinner party, but for a BBQ with kids or a casual family dinner, these are a keeper.

Key West Chicken
Very easy to make, and quite good. Next time, we will reserve the marinade to pour over the grilled chicken as the dish could have used a little more sauce. All in all, a keeper.
