Summer Vegetable Salad
Summer Vegetable Salad
About this Cook
I'm a wife and mother of two. I enjoy trying new recipes and LOVE the variety I can find on allrecipes.
My favorite things to cook
This changes often. I LOVE vegetables and like healthy version recipes. I was on a japanese kick a few years ago, Indian last year (still a bit stuck to this), and seem to be heading into a Mexican spell this year. Thank goodness my family enjoys the variety too.
My favorite family cooking traditions
I was raised in a very rural area of West Virginia. There were tons of traditions growing up that I can't follow now as we live in the suburbs. Our family grew or raised most of what we ate. Everything was so fresh. My relatives would all get together to make apple butter with an outdoor fire using a large metal tub...delicious. They would also get together to make molasses from the juice of raw sugarcane while us kids slid down the hill of pressed cane. Everyone would get together for harvests and then again for canning the fruits and vegetables. Too many traditions for here...great stuff that I still miss although it's been over 20 years ago.
My cooking triumphs
I have to say a three cheese tofu pasta dish that every one of the family really likes. I didn't tell anyone about the tofu until they tried it and declared it a hit.
My cooking tragedies
Too many to think about...I think the worst was back in my early 20's when I threw the dinner pan and all in the trash!!

Flavorful Beef Stir-Fry
I made this last night with red wine as the liquid for the sauce and the addition of tri-color bell peppers...wonderful, fast, easy, adaptable recipe! The kids and husband all loved it. I'll be making this again for sure!

Quick and Easy Tuna Casserole
We loved this recipe - I did combine it a few things from another on this site, but this recipe was the base. After combining everything I added shredded cheddar on top, baked at 350 for 20 minutes - added french fried onions and baked for 5 more minutes. Thank you for an easy tasty one dish meal!

Oregon Salmon Patties
Made these about a dozen times now any everyone that I make them for LOVES them. Once I ran out of regular crackers and substitued zesty cheese crackers to make the crumbs...It was great! I've made it a permanent change now. Thanks for a tasty recipe!
