Tandoori Chicken II

Though I made this, I did not eat it as I am Vegan. I made it for my husband to accompany a "side" dish. When asked what he'd rate it, he said a 4 because of the spiciness and he's not huge on very spicy food.

Butter Chickpea Curry

WOW AMAZING!!! I wanted to try a new recipe and came across this. As there's no (good) indian restaurants in town, I'm going through withdrawals! I took a chance and doubled the recipe so I could take some in my lunches, and I'm SO glad I did! What a GREAT recipe! Very easy, as well! Served over some brown basmati rice with naan, and I barely tasted it I ate it so fast!!! This will DEFINITELY be a part of my regular meals!

Multigrain Pancakes

I was exceedingly disappointed when I wanted pancakes for breakfast and discovered I had no mix. This recipe was simple and I had most of the ingredients, so I gave it a try- with a few changes. I only used 1 cup of whole grain flour as it was all I had in the house. I used 3 teaspoons of brown sugar as I didn't have Splenda. As I am Vegan, I removed the egg whites, yogurt, and milk and used 1/4 cup apple sauce and 1/2 cup (plus a bit more as needed) almond milk instead. Also didn't add the water. Recipe was quite sweet as I added 1 cup raspberries as well, so the brown sugar probably could have been reduced or eliminated. Will definitely keep this on hand for the future!

Oma's Rhubarb Cake

I was initially drawn to this recipe because of the minimal fat. I adapted the recipe a bit to try and make it a little healthier: I used 1/2 the amount of sugar (by using Splenda brown sugar) and used whole wheat flour in both the cake and topping. I added 2 tbsp of egg white as I found the cake batter a little dry. And I also used 2 tbsp of apple sauce instead of the oil for the topping. It was REALLY more like a paste, so I had to put it on top by spreading it out by hand. I also baked them in muffin trays as they're a little more portable, but my rhubarb chunks were a little large, so they tended to collapse a bit. I also added the cinnemon as well as ground cloves and allspice into the topping. But VERY moist and delicious cake! Will DEFINATELY make again and look forward to adapting even more!

World's Best Lasagna

Fabulous dinner and was able to prepare it the night before, then just pop in the oven. Took someone's suggestion regarding the noodles (soaking them for 20 minutes so they're flexible, but not floppy, so very easy to handle)which was always the part I hated. Will definately make again and next time will add spinach!

Terrific Turkey Chili

Found this recipe when my husband requested turkey chili. Simple, easy, and nothing exotic. Made a couple changes: used 2 smallish zucchini as that was all I could find, but could have definately done with 3. Added a can of mixed beans, but I'll probably add another can of kidney beans. Instead of browning the onion, pepper and zucchini, I just tossed it into the chili as I was planning on letting it simmer. Didn't add the jar of chili's, but as I used a medium salsa, it was quite spicy enough. Will definately forward this recipe to my brother as he loves chili, but his wife doesn't eat beef.

Big Soft Ginger Cookies

The only problem with making the recipe as presented was that there weren't enough!!! I ended up with 18 cookies and I split one with my husband. I made them on the 22nd for an Xmas Eve party and I'll probably have to make another batch! They are WAY too good!!! After reading the various reviews, the only change I made was increasing the cinnemon and cloves to 1 tsp each as I like those spices. I think they're perfect cookies!

Garbanzo Bean Chocolate Cake (Gluten Free!)

Hearty Multigrain Bread

Loved this recipe. Adjusted it (1 1/2 times) to fit closer to the usual recipe my husband uses in the machine. Worked out perfect. Didn't use the full amount of sugar, and used all whole wheat flour, but had everything else exact. My husband says the "verdict is still out" but he'll eat anything and it'll take some used to switching from white bread to whole wheat/grain bread. I know I'LL keep making this recipe! Look forward to trying different flours.

Low-Fat Blueberry Bran Muffins

Excellent! Always looking for healthier choices for snacking. Made a couple changes- didn't have brown flour, so used 3/4 c white and 1/4 c ground flax. Also added allspice and nutmeg and increased the amount of blueberries, though had a couple issues as used mini muffin pans, so if there were too many blueberries, they'd break in half coming out of the tin. Excellent recipe. Husband loved it and will continue to use.

Healthy Banana Cookies

Being health conscious, I have avoided cookies but was very excited when I found this recipe. I made it exact to test it and found the texture different, but not unpleasant. As we eat a lot of bananas, I usually have them go beyond ideal ripeness before we can eat them all. Now I'll be buying in excess to make sure I can make these! Looking forward to varying the recipe. They also tasted better and better as they cooled. It was hard not to eat the whole batch!

Blueberry Flax Pancakes

EDIT: Not all ground flax is created equal. I LOVE this recipe now that I've found a ground flax seed that doesn't turn to cement paste! I've tried apple cinnamon and banana since. It's my "treat" on the weekend and look forward to it! very yummy!

Tofu and Veggies in Peanut Sauce

I wish I had read the reviews before wasting time and money making this recipe. I love peanut butter and hated this. My husband who will eat anything I put down in front of him took one bite when I told him I wouldn'r be offended if he didn't eat it. What a waste of good food. It seems that people either love or hate this recipe- sorry, but I didn't like it.

Baked Shells in Sauce

This was the first tofu meal I've eaten let alone made! It was quick and easy and very yummy. Even my husband enjoyed it and "could handle" having it a couple times. His and my only complaint was that I customized it to 2 servings and there wasn't enough it was so good!
