Vegan Cupcakes
Wow! Awesome! I only made a few changes. I used canola oil because my kids dont like coconut. I also used very vanilla soy milk and white vinegar. Finally, i upped the vanilla extract to 2tsp. It rose perfectly and was light and fluffy! My kids ate it all up.
