Country Chicken

This was a huge hit here. Nothing fancy or gourmet quality, but this is major comfort food. I used chicken stock as it is what I had in the pantry. I served this over long grain white rice and my family raved over this simple dish. I used 6 boneless chicken breasts and seasoned with Season-All, fresh ground black pepper and some paprika. I simmered this about 90 minutes. It (sauce) was rather thin though and I added some flour/water paste to try to thicken it some. Thanks, this is fantastic!

Garlic Green Beans

Great green beans. I used canned french style green beans so they weren't tender-crisp. The next time I would use frozen instead to fix this. This was a nicely flavored dish, not too garlicky either.

Easy Chocolate Chip Cookies

These were actually pretty decent considering that they are so simple to make. They aren't like toll-house or anything, but hey, for the ingredients involved, they're darned good. I used store brand cake mix but was a cup shy since I had used it for a recipe, so I made up the difference with baking mix and some white sugar. I used milk chocolate chips and didn't quite have the full amount, but it didn't matter to my family. They liked these fine.

Crunchy Berry Parfaits

Excellent quick and easy breakfast! I used blackberries and raspberries but found the seeds to be a little annoying. A little dob of whipped cream on the top and this was a great light dish.

Lightly Scrambled Eggs

I used whole eggs and left out the food coloring. I didn't care for this at all. The sour cream left a weird taste or something and it reminded me of mayo (which I don't like either). I'd have liked this fine without the sour cream. It just left a strange aftertaste I didn't like.

Festive Scrambled Eggs

These were okay. I used some green pepper too along with the red pimento. I doubled the amount of peppers as there was hardly any the other way. I used chives since we like the flavor of onion and eggs. I wasn't sure about the flour taste though and it really didn't add anything special to the dish as far as I could tell. I wrapped these in a warm flour tortilla and served with salsa. This was a little bland for me, but a good base.

Buffet Scrambled Eggs

These were really moist and had a nice flavor. I didn't care for the texture though, too mushy. I did cook the eggs til they were set and then added the sauce so I know they were done, but the mushy underdone texture after adding the sauce was off-putting and I fed them to the dog. The flavor was fine though. SO... if I were to fix these again I'd pile the eggs on a piece of toast and then spoon the sauce over the whole thing like eggs benedict. I'm sure this dish would have been much more to my liking served in this manner. This was very similar and reminded me of creamed eggs (Which I like a lot). This has potential to be a lot better, but is a good basic starter.

Strawberry Spinach Salad I

This was an excellent salad. The dressing was sweet and tangy and very mild in flavor. I used rice wine vinegar and onion powder instead of fresh onion. I only added a little fresh ground black pepper on this at the table. Thanks for a great recipe.

Cinnamon Griddle Cakes

Amazing. This was the taste of a cinnamon roll in a pancake. The most delicious pancake I have ever eaten. I used half and half instead of milk. Moist, light, fluffy, delicious.

Chicken Florentine Casserole

This was an excellent dish. My family loved this. I didn't have cream of mushroom soup so I used cream of celery and it worked out great. I sauteed the mushroom in the butter first then added fresh spinach (about 6 oz) and sauteed it until it wilted. I didn't precook the chicken, I just placed it on the bed of spinach/mushrooms and then baked this for 45 minutes and it turned out great. This was a little soupy though, but I'm not sure how to correct that.

Quick and Simple Broccoli and Cheese

I made this at my son's request. This was easy, but needed a little help. I used American/Cheddar-Jack blend and added some cubed Velveeta as well because it needed more cheese and wasn't creamy enough for us. I cooked mine on the stove according to pkg directions and then drained off the water and added the cheese and melted it on low heat. My son loved this dish!

Fabulous Fruit Salad II

This was quick, tasty, and easy. I used strawberry yogurt as my other choices were cotton candy or strawberry kiwi, but not vanilla. I really liked the combo of walnuts and apples, that was great together in this. I added a spoon of cool whip to this and it was great.

Greek Pasta with Tomatoes and White Beans

This had excellent fresh flavor. I used a can of diced tomatoes that had garlic, basil, and oregano in it already (Italian style tomatoes?) and only used 7 oz spinach. The beans though, still had a bland canned taste though so maybe a longer simmer in the tomatoes would fix that? This was really flavorful. Even the hungry teen liked this a lot and his only complaint was there was no meat like meatballs in this. Excellent recipe! Thanks.

Cheesy Meatball Soup

Wonderfully cheesy soup! I used season-all instead of salt and cooked the meatballs through before adding to the soup. I did grind some black pepper into this as well. It could have used a little salt in the broth as the potatoes would have had a better flavor. This tasted great and wasn't spicy. I used Frank's Red Hot Sauce and block Velveeta cheese, cubed. Both the hungry teen and I added some ground cayenne to our bowls as we prefer more spice, but my husband thought it was fine as is. We all gave this 5 stars. Thanks Ione for the great soup!

Quick Beef Pizza

This was a huge hit here. My husband doesn't like red sauce much and he really liked this one. I added some diced onion and sliced fresh mushrooms too at his request and used mostly mozzarella cheese with a little Cheddar. I added some Hamburger Grill Seasoning by McCormick and some dried onion to the meat as I browned it. This was a hit with my husband.

Basic Beef Pizza

Very good pizza. I used some McCormick hamburger grill seasoning and some dried minced onion when I cooked the meat, so I left out the salt and added celery seed instead of celery salt. I already had pizza dough made so I used that and made pizza sauce III. This pizza was quite good and we enjoyed it. I did add a little shredded American/Cheddar Jack blend cheese too so it would be more like a cheeseburger.

Jill's Sloppy Joes

These are great. Very tangy with some zip and a little spice. I scaled this down to 1 lb. of beef and used dried minced onion (1 small handful, about 2 T) and half cumin powder half cumin seeds and tossed a pinch of celery seed in too. I let this simmer for an hour since it was for hubby's lunch and that's how much time I had. This was a really great sandwich. I served this on toasted buns. We liked this and would definitely fix this again although it didn't make our favorites, it's still a winner.

Wonderful Raspberry Walnut Dinner Salad

Wonderful salad. I don't like tomatoes so I changed it up with strawberries instead. I liked all the different textures in this salad. I used a home made raspberry dressing. Thanks for the great recipe, this salad is so delish!
