Blue Cheese, Avocado, and Grape Salad

This was pretty good but it needed something like nuts or bacon bits too. The blue cheese was a bit overpowering though and seemed to dominate the dish. I used ranch dressing and added blue cheese chunks. I didn't like this enough to make it again though, sorry.

Mushroom Sauce Baked Pork Chops

These were really easy and I had everything on hand to fix them. After eating this though we all agreed we prefer smothered pork chops over rice instead of potatoes. Mine came out a little soupy but my hubby forgot to uncover them when the timer went off so I think that's why. This was a little bland overall, but not bad.

Mexican-Style Goulash

This was okay but we thought it was very bland and needed a lot more flavor and spice. If I were to fix this again I would add in some garlic, green pepper, salsa instead of tomato sauce, more chili powder, maybe even some comino, and crushed red pepper or cayenne. I doubt I'll fix it again even though I thought it could be salvageable with some modifications because my husband won't try it again. Thanks anyway. It really wasn't bad, just not our tastes.

Spicy Grilled Chicken

This chicken is really really good. I used boneless breasts and let them marinate for about 2 hours. We didn't think this was spicy, but it was great tasting chicken.

Curried Cashew, Pear, and Grape Salad

This was an excellent salad. I loved all the different textures and flavors in this and how well they all went together. The salad dressing wasn't much by itself but it was mellow and sweet and paired so well with the hot spicy cashews. I used bacon flavored bits instead. I cut the olive oil in half for the dressing and used red curry powder for the cashews. Boy were they ever hot and spicy! The sweet dressing cools their heat some. This is restaurant quality. So delicious.

Black Forest Dump Cake II

Sinfully delicious. That is how my husband described this. I used a whole stick of margarine, pecan halves instead, and all I had was 2 cans of cherries not filling so I drained most of the juice off. This was done 10 minutes early. Good, we all liked this. It is really rich.

Bauernomlett (Farmer's Omelet)

This was very good, however it seemed like something was missing. Next time I will add some green pepper and onion too for flavor. Maybe a handful of shredded cheddar would make this even better. Ketchup was good with this. I had trouble flipping mine over, it sort of fell apart, but tasted fine.

Easy Marinated Pork Tenderloin

This was a very simple marinade. I used honey and dijon mustard (equal amounts of each) and was heavy handed with the garlic. I used teriaki sauce instead of soy sauce. My husband raved over this dish, Thanks!

Cheddar Hash Brown Omelet

Very good. Flavorful. I used frozen O'Brien potatoes so I skipped the onion and peppers. I did sprinkle a little onion powder into the egg mixture and used sliced cheese sharp cheddar flavor. This would be perfect to wrap in a flour tortilla as a breakfast taco. Salsa was a great condiment for this. Thanks for the great omelet recipe!

Breaded Ranch Chicken

This was really easy, my family loved it, and baked in the oven instead of fried so I liked it. I wasn't a fan of the ranch flavor on this, but I would eat it again if it were served. My guys liked this quite a bit. I was out of corn flakes so I used panko bread crumbs instead.

Parsley Red Potatoes

These were a nice side dish with our chicken. They are rather bland though and would pretty much go with anything because of that. I microwaved mine on the potato setting in a covered dish and they turned out fine. My husband didn't understand the "green stuff" on his potatoes though so there was a little complaint about that.

Spiced Beef Stew

This was a good traditional beef stew. this reminded me of pot roast with gravy more than anything. This isn't as good as my favorite recipe, but it is still really good. I used a can of beef consomme since I didn't have broth and a can of french onion soup since I didn't feel like cutting up onions and it was sitting there next to the consomme in my pantry. The beer made this smell odd (to me anyway) but I couldn't taste it.

Fruit Hash

This was very good. Very sweet though. I liked the tropical flavors. I didn't add the milk though since the pineapple was a bit juicy even after I drained it. I used colored mini marshmallows and crushed pineapple because it is what I had. Good stuff. Thanks!

Manicotti Italian Casserole

Good for such an easy nothing to it dish. I cut this in half and left out the Italian sausage and added some Italian seasoning, season all, minced garlic, and dried minced onion to the meat when I cooked it. Only about 1/4 tsp of each just so the meat wouldn't be bland without the Italian sausage. I had to add a can of tomato sauce as there wasn't enough with only 1 jar. Maybe I eyeballed a little heavy on half the box of pasta? This was good and the family is looking forward to leftovers tomorrow.

Italian Zucchini Saute

This was very good. I used a Mediterranean blend of vegetables of zucchini with other veggies and then added a clove of minced garlic because I just couldn't imagine the olive oil and onion without it. Without the garlic though I think it would be having that "missing something" flavor. My husband said it looked like a heartburn waiting to happen so he wouldn't try any. The hungry teen and I liked it. It was even better after a sprinkle of grated parmesan cheese on top.

Pear and Blue Cheese Salad

This was actually very good! I was afraid the blue cheese would be too strong, but the sweet dressing mellows it out some. I didn't have walnut oil so I used olive oil instead and Miracle Whip instead of plain mayo. Delicious salad. I used salad topping fried onions instead of fresh. Thanks, this was fantastic.

Egg Tostada

This had excellent flavor. Too bad the texture was mushy. I didn't like the texture at all and couldn't get over the mush factor. Next time I will just cook the eggs and add the salsa after they are done. I used store brand medium salsa.

Country Chicken

This was a huge hit here. Nothing fancy or gourmet quality, but this is major comfort food. I used chicken stock as it is what I had in the pantry. I served this over long grain white rice and my family raved over this simple dish. I used 6 boneless chicken breasts and seasoned with Season-All, fresh ground black pepper and some paprika. I simmered this about 90 minutes. It (sauce) was rather thin though and I added some flour/water paste to try to thicken it some. Thanks, this is fantastic!

Garlic Green Beans

Great green beans. I used canned french style green beans so they weren't tender-crisp. The next time I would use frozen instead to fix this. This was a nicely flavored dish, not too garlicky either.
