My family loved this dish. I added another tsp of Old Bay seasoning on top of the 2 tsp of cajun seasoning I'd already put in. I also put in a few shakes of cayenne pepper sauce. I used smoked sausage but next time I'll use Andouille instead for a more authentic dish. I had to add quite a bit more chicken broth as the rice was still crunchy and the dish was too dry. I let this simmer for about an hour before I added the rice. Thanks, my family was pleased with this dinner.

Delish Sloppy Joes

These were okay but rather bland and needed quite a bit of doctoring up to suit our tastes. Very kid friendly though as there is no green pepper or onion or any chunks of any kind in this.

Jenn's Out Of This World Spaghetti and Meatballs

Wonderful sauce. We all enjoyed this dish. I pre-browned the meatballs because I just had to. I used dried minced onion. My husband liked this well enough to comment on how good it was. Thanks Jenn!

Roasted Garlic Cauliflower

Pigs in Blankets

Hubby said this was good but a little salty although I didn't add any salt. He thinks it was the brand of hot dogs I used. I don't eat hot dogs. My husband gave this a 3. This is kid friendly food.

Red, White and Blue Burgers

This turned out very well. I cooked these under the broiler. I thought the blue cheese was a little too strong for me but my husband enjoyed every bite of his. I didn't have dried Ranch dressing so I used some bottled Ranch dressing. We enjoyed this different burger. Thanks.

Individual Egg Bakes

Pretty good. The bacon on the bottom though became soggy from the moisture in the egg. The salsa on bottom cooked right in and there was no sauce to spoon over. Cute idea and presentation.

Vegetable Scrambled Eggs

These had a lot of flavor. This would be a perfect breakfast taco filling. I didn't care for this plain as the green pepper was too strong for me, but wrapped in a tortilla with some hot sauce added, I would have liked it much better.

Pesto Scrambled Eggs

Yumm... so delicious. These were very moist eggs. And full of flavor! I left out the oils and used non stick spray instead. While this was fantastic as written, I think I'm going to use feta cheese next time. So good, these are a must try!

A Good Easy Garlic Chicken

Very easy. Not bad. I would use more garlic though next time. I baked mine in the oven and used non stick spray. I'm sure it would have tasted better in the skillet with loads of butter, but for how I fixed it it came out fine. The family liked this dish.

Farmhouse Omelets

Really delicious! I sauteed the green peppers in with the onion and used canadian bacon instead of ham. I left out the mushroom. I did add a little onion powder to the eggs since it's tradition and habit. This was very good. I topped mine with a little chives and some salsa, yummy!

Mild Curry Omelet

This was really quite tasty. I didn't care for the red peppers though, but that is a personal thing, they tasted fine I just didn't like their texture in this. I used dried minced onion and freeze dried chives instead of fresh. I only used half the sesame oil called for. I enjoyed this and would eat it again. I might try adding spinach too and see how that works out in this. Thanks.

Tim's Famous Salsa Burgers

This turned out really good. I did sprinkle some hamburger seasoning over the patties before cooking. I only used half the hot sauce called for as I wasn't sure my husband would like his burger otherwise. As these turned out, he made a comment at the dinner table on how much he liked this dish, so Thanks!

Monterey Turkey Omelet

This was quite flavorful and filling. It seemed something was missing though, so I topped it with some Louisiana style hot sauce and that helped. I used diced canadian bacon in this and dried onion instead of fresh. I did sprinkle a little onion powder in the scrambled eggs part, but that's tradition and habit. This would make a great "breakfast for dinner" dish. I left out the butter and just used non stick spray and it worked fine. This didn't make my favorites list, but it was tasty and far from boring.

Chili Bean Cheese Omelet

This was a lot better than I expected. I think though that Ranch style chili beans would be better as the kidney beans were still a little bland. I topped this with cayenne pepper sauce and it was the perfect touch. I used some freeze dried chives and some onion powder and left out the fresh onion. I'd eat this again, but like I said maybe Ranch Style brand chili beans would have been a little better.

French Salad with Russian Dressing

This was a nice luncheon salad. I used Kraft French dressing and Miracle Whip with a little Frank's Red Hot. It was good, but not really different than regular French dressing. This did make a pretty salad.
